Celebrate? National Corn on the Cob Day on June 11 is our reminder that summertime picnics are in full swing. The smell of fresh corn on the cob cooking makes our mouths water. We don't care if you grill it, boil it, or bake it. Some call it “corn-stick,” others go with “sweet pole,” but we like to call it amazing — especially when you use those cute plastic corn on the cob handles. National Corn on the Cob Day falls on June 11 — the perfect pre-summer date. (Although, for most home gardens, mid-June is still too early for the harvest.) But you can’t blame anyone for being in a hurry. The sweetness doesn’t hang around for very long. It has to be picked at its freshest, otherwise there’s a risk of — nothing really — it’s just slightly less incredible tasting. Note: If you plan on doing the picking yourself, there’s a trick to spotting when the corn is ready. During the milk stage, the kernels are still soft, and this is nature’s way of saying “come and get it!” Boil it, steam it, roast it, or grill it — there’s no wrong or right method as long as it stays on that cob. #corn #grilling #food

Glazed Baby Eggplants! A recipe that takes me back home.... Happy to share my mom's (Aida) recipe here: Find your baby eggplants at your local farmers' market. Twist the tops off the eggplants, and poke them with a fork to create small holes. Soak the eggplants in water, then refrigerate for 24 hours. Bring a pot of water to a boil and cook the eggplants until they are halfway done. Remove and drain thoroughly. In a large pot, melt 4 cups of sugar in boiling water. Add the partially cooked eggplants to the pot and let the mixture cool. Refrigerate for 24 hours. The next day, bring the mixture to a boil again, cooking until the syrup thickens and the eggplants are fully cooked. Pour the glazed eggplants and syrup into sterilized mason jars, adding a few cloves to each jar for added flavor. When ready to serve, cut the glazed eggplants in half and place a walnut in the middle for a delightful touch. #StartWithDelicious #SupportLocalFarmers #GlazedBabyEggplants

Wiktoria recommends we make "Bigos" in January. It's a hearty Polish "Hunter's Stew" that's easy to make. This recipe serves 4: 1kg sauerkraut (roughly chopped), 25g dried mushrooms (sliced), three bay leaves, salt, pepper and dried juniper to season. 150g smoked bacon (chopped), 200g beef shoulder (cut into small chunks), 500g smoked sausage (sliced), one medium sized onion (chopped), 50g prunes (halved), and a large glass of good quality red wine. Combine the sauerkraut, mushrooms, bay leaves and seasoning in a large pan with 200ml of water, cook on low heat until soft, stirring regularly. Fry the meats and onion in a frying pan with a knob of butter until golden, then add to the sauerkraut mixture and mix well. Cook on low heat for an hour. Finally, add the prunes, wine and add further seasoning, if required, and cook on low heat for a further 10 minutes before serving with thick-cut bread and butter or creamy mashed potato. #bigos #polishmeal #huntersstew #recipe
