You are in front of a beautiful fish stand, carefully exposed in the ice by a smiling fishmonger who offers you fish of all types and at any price. But how to figure out if what you are selling is actually fresh fish? Let’s set our senses in motion. Let’s start from the sight: a fresh fish must have a convex and protruding eye, with a transparent cornea and a bright black pupil. The gills must be red without mucus. To our nose must not arrive bad smells type ammonia; in particular from the gills must come a fresh smell of sea water, while to the touch the fish must have compact and firm meats. An important tip: when buying fish, the first factor not to be underestimated, is the temperature at which it is stored. The fish displayed in the stalls must be stored in abundant ice and not exposed to the sun.

€2.5 Million Spill. Cepa 21 winery incurred losses amounting to more than €2.5 million following a sabotage at the winery’s grounds. 5 tanks containing 60,000 litres of the winery’s two most expensive varieties were opened at 3 am. The intruder had a perfect knowledge of the winery’s layout and knew how to swiftly sabotage the tanks, something only an individual who was familiar with the winery could execute, but the identity of the culprit is yet to be disclosed. It is certain however that the insider must have had experienced grievances and shown signs of frustration prior to this incident. Fortunately, only three of the five tanks he had opened contained wine. This incident goes to show that any industry and any organisation can suffer incredibly costly incidents due to negligence on insider risk.
