An amazing adventure started 4 years ago today... It was the start of Lockdown and I was looking for stuff to keep me busy. So I started a podcast interviewing local Saffers based in NZ. One of those was Anita Vogt, the owner of a local bakery, Regal Shortbread. I was inspired. At the same time, Jamie Oliver and Nadia Lim had just launched cooking shows they filmed at home during lockdown. I became curious. Inspired and curious, I started to do some cooking and baking and posting the occasional successful result to my Instagram account. Coming out of lockdown, a local Italian restaurant, Soprano Petone, advertised for a part-time Commis Chef. I somehow convinced them to take me on, using my IG account as my resume. It was really hard work but I learnt an incredible amount and the bug to learn more bit deep. I wanted to learn something new and different.. baking! So, armed with an Instagram account that now featured a few more success stories, I got a job at the local supermarket as a bakery assistant. A few months later I was running the entire dough shift on my own. But there were plans for that bakery and it involved me. in November 2022, four New World supermarkets in Wellington came together to form the first regional bakery to bake for all 4 Supermarkets. It was a huge undertaking that had never been tackled before in NZ and I was appointed as the General Manager. It was the hardest, most stressful job I ever did. I worked 90hrs the first week. I took my first day off, 3 weeks later. Between doing a lot of the baking myself, I was managing staff, production deadlines, planning, finances and 4 owners. I was under incredible pressure and it took its toll very quickly and after 4 months the bakery was up and running but I was burnt out and my body was pretty broken. So I decided to walk away. But... I couldn't put away my knives and pans so I went back to where it started... cooking and baking at home and posting the occasional success to my Instagram account. With a diabetes diagnosis a few months later that required a radical change in diet, I started focusing on exploring diabetes-friendly recipes and posting those to my Instagram account. I now have a son that has started doing the same... he is incredibly talented and has become my favourite home chef. And me? I still sometimes look at local ads for bakers or chefs and think I would like to get back on the tools... it's really addictive. But then my old, sore body reminds me that I should just stick to my own little home kitchen. To end off this story... This is a pic of a recipe I developed yesterday.
