It is specifically during the winter months that we really feel the limitation of our concept of using 100% local ingredients - a principle we are proud of and have adhered to since Domestic opened its doors. ☘️ Mastering the art of handling and appreciating the beauty of the reduced variety of ingredients available in winter has been a long-term exercise. The creation of a winter menu has undoubtedly presented many challenges for us over the years. Our hard work and time invested during the summer in preserving and fermenting are now reaping rewards. These ancient techniques not only allow us to preserve and utilize ingredients that would otherwise be unavailable in the winter months, but they also help us minimize food waste by preserving surplus ingredients. This approach allows us to create innovative, delicious, and sustainable dishes all year round! 😀 To be completely honest, it would be far more cost-effective and convenient to buy a jar of pickled vegetables from a large-scale wholesaler. So why do we choose to do all this? Our decision to use seasonal and local ingredients supports local producers and reduces the need for long-distance transport, thereby minimizing our CO2 footprint. 🎙️ I speak to a lot of wine leaders, and they all have the same question nowadays: "Are we in the right industry after these huge decline in global consumption habits?" 📞 My answer is a definitive "Yes"... But why?! ✅ Wine has been for thousands of years part of humanity's daily life ✅ Wine is and foremost an agricultural product with limited chemical intrants (If we want to 😉) ✅ Wine offers endless options for all types of consumers (varieties/styles/prices), to accompany anything ✅ Wine can be considered as a product to consume/social status validation/symbol of love & appreciation/investment tool/legacy, etc The issue is not with wine itself, rather than how dynamic was the wine industry to anticipate and react to social & economic changes globally with full "transparancy & humbleness".
