Creamy Cauliflower Soup - a simple yet satisfying meal that's perfect for any time (or day) of the week. 🍲 Whether you're in need of a quick lunch option or a comforting dinner, this soup will delight your taste buds and your health. Ingredients - Serves 4 • 1 white onion • 3 garlic cloves • Handful of chives • 1 cauliflower head, chopped into florets • 850ml homemade chicken/vegetable broth • 1 organic chicken breast (optional) • ½ tsp of olive oil Directions 1. If you would like to add chicken, season your breast then steam for 15-20 minutes. Once cooked, shred into small pieces with two forks. 2. Add the olive oil to a non-stick pan and add your chopped white onion. Allow the onion to heat up slowly on a low flame for around 5 minutes. Add the chopped garlic cloves and cook for another 2 minutes. Make sure they don't burn. 3. Add the chicken vegetable broth. Stir in cauliflower and bring to a boil. 4. Lower the heat and cover with a lid for about 25 minutes, or until cauliflower is very soft. 5. Whiz together until smooth. 6. Season with salt and pepper, then sprinkle some fresh chives over the top. 7. If you have chosen to include chicken, mix in the shredded chicken to add a nice bite to your soup. Tried this recipe? Today, I am thinking about cottage cheese. I LOVE cottage cheese. I'm not even going to bore on about how healthy and good for you it is, but skip straight to some of my favourite ways to have it. I hope perhaps to inspire those who don't like it, well they think they don't, to try it and to hear ideas from fellow cottage cheese enthusiasts 😊 1. jacket potato with cottage cheese. I love the hot potato with butter and salt and then the juxtaposition of the cold cottage cheese on top 2. cottage cheese on toast. You could just add it with avocado, smoked salmon, fried tomatoes, whatever you like really. My favourite takes me back to childhood and something my mum used to make for lunch - lightly toasted bread with butter, Marmite and cottage cheese on top, then back under the grill to get the cottage cheese hot. On a good day, you can almost slightly char the cheese, but to be honest it's difficult without burning the toast too. If you like Marmite, it's delicious 3. avocado and cottage cheese salad. Chop the avocado, add cottage cheese, a little plain yogurt, a sliced spring onion, a diced green chilli, salt, pepper and a good squeeze of lime juice. Have on a bed of lettuce with some herbs on top - mint, chives, coriander, parsley - all good 4. add cottage cheese to things to make them more creamy - tuna salad or scrambled eggs come to mind but smoothies also work and an easy way to add protein 5. add to a fruit salad, any fruits you like, with a big spoonful of Greek yogurt and a drizzle of honey. Toast some flaked almonds and sesame seeds in a dry hot frying pan until golden and the way it sizzles as they land on the cold fruit salad is just part of the sensory joy of such a simple dish 6. make a cottage cheese dip - blend with herbs, a little garlic, some lemon juice. Have with pitta bread, crackers or perhaps with celery, carrot or cucumber sticks I also read that you can squeeze the moisture out of the cottage cheese and lightly fry it before using in place of paneer in a curry. I haven't tried it yet but I will do 😋 #cottagecheese #protein #recipeideas

Fire up the Viking 5 Series 36" Gas Rangetop and follow along with this shakshuka and sunny side up eggs recipe from the @middleby_chicago showroom! 🔥🍾 Ingredients - Olive oil - 1 medium onion, diced - 2-3 garlic cloves, minced - 1 red pepper, diced - 8 ounces roasted red peppers, sliced - 14 ounce can diced tomatoes - 2- 28 ounce cans crushed tomatoes - 1-2 teaspoons turmeric - 1 tablespoon cumin - 1 tablespoon sweet smoked paprika - 2 bay leaves - Salt and pepper - Pinch of crushed red pepper flake - ¼ cup fresh chopped parsley - ¼ cup fresh chopped cilantro - ½ cup crumbled Feta cheese Steps 1. Start in a wide, but slightly deep skillet. Preheat pan then add oil, onion, garlic, red pepper and roasted red peppers. Season with salt and pepper. Saute veggies until fragrant and tender. 2. Then add diced tomatoes (with the juice), cumin, turmeric, sweet smoked paprika, bay leaves and red pepper flake. Cook over medium heat careful to not carmelize or burn the mixture, but cooking out excess liquid until mixture is thicker (this is called a sofrito). 3. Add in crushed tomatoes and stir in. Adjust seasoning according to your tastebuds. 4. Simmer on low low heat for at least 30 mins to an hour. 5. When ready to serve: Stir in feta cheese and fresh herbs, top with Sunnyside up egg. *For the Shakshuka it is best when prepared they day before so it has time to sit and the flavors can meld. GET CREATIVE WITH SALADS! I had this salad the other night. I wasn't too hungry so a salad was enough. Although I almost never put fresh fruit in a tossed salad, it somehow appealed to me the other night, so I added some strawberries. It's great if you can add a variety of colors, both for eye appeal and because each color family adds different nutrients and health benefits. This salad included red leaf lettuce, scallions, jicama, strawberries, ground super seeds (hemp, chia, and flax), and pistachio nuts. I topped it with a sprinkle of ground sumac, seasoned salt, some tasty balsamic vinegar, a drizzle of avocado oil and a drizzle of tahini. It you wanted to made such a salad a complete meal, you could add beans, or leftover cooked chicken or fish. I'd leave the berries out of such a salad, as the food combining wouldn't be the best. Other things you can add to salads: bell peppers, avocado, other nuts and/or seeds, carrots, red cabbage, fresh or roasted tomato, cucumbers, dried cranberries, gogi berries, raisins, beets, radishes, cilantro, parsley. Fresh lemon and/or lime juice could be used instead of or in addition to the vinegar. You could also make a nice vinagrette salad dressing. But don't stop there! Loaded Cauliflower Mashed “Potatoes" Ingredients: 4 slices Jennie-O Extra Lean Turkey bacon 6 cups cauliflower florets 3 cloves crushed garlic 1/3 cup 1% buttermilk 1 tbsp whipped butter ¾ tsp salt ½ tsp black pepper 2 tbsp minced fresh chives, divided ¼ cup shredded reduced fat cheddar cheese Directions: Cook the turkey bacon in a skillet until crisp; set aside on a paper towel then crumble. Fill a large pot with water, bring to a boil and add cauliflower and garlic. Boil until the cauliflower is soft, about 15-20 minutes. Drain, and return to the pot. Preheat the oven to 350°F. Add the buttermilk, butter, salt and pepper to the cauliflower and purée with a hand blender. If you don't own a hand blender, a regular blender would work fine as well. Mix in 1 tbsp of the chives and transfer to 4 individual casseroles (3/4 cups each) or one 8 x 8 casserole dish and top with cheddar and crumbled bacon. Bake in the oven until the cheese melts, about 5 minutes then top with remaining chives. Makes 4 servings Per serving: ¾ ounce protein, 3 vegetables, 3 condiments, ¼ healthy fat

**Spicy Winter Salad Dressing** Dressings are the best way to make salads more interesting. Here's our current favourite recipe. Spicy Winter Dressing: 3 tbsp Orange juice 1 tbsp Apple Cider Vinegar 1 tbsp Extra Virgin Olive Oil 1 tsp Honey (optional) 1 Garlic clove finely chopped 1 Green chili finely chopped A pinch of Salt. Salad base: 1 cup chopped cucumber 1/2 cup chopped apple 1/2 cup chopped lettuce 1/2 cup chopped carrot 1/2 cup chopped purple cabbage 1/4 cup chopped zucchini Few olives Can add boiled chickpeas or paneer for proteins. Mix all the dressing ingredients, pour on your salad veggies, toss it well and enjoy. To view recipe, like and follow us on facebook https://lnkd.in/g5Pi6GeC Best Ever Guacamole (Fresh, Easy & Authentic) Ingredients: ♥ 😋 • 3 ripe avocados • ½ small yellow onion, finely diced • 2 Roma tomatoes, diced • 3 tablespoons fresh cilantro, finely chopped • 1 jalapeno pepper, seeds removed and finely diced • 2 garlic cloves, minced • 1 lime, juiced • ½ teaspoon sea salt Instructions: 1. Slice the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. 2. Mash the avocado with a fork to your desired consistency, whether chunky or smooth. 3. Add the diced onion, tomatoes, cilantro, jalapeno, minced garlic, lime juice, and sea salt to the bowl. 4. Stir everything together until well combined. 5. Taste the guacamole and adjust the seasoning with more salt or lime juice if needed. 6. Serve the guacamole with tortilla chips. Enjoy!
