When considering sustainability in the craft beer industry, it's a stubborn fact that breweries consume a lot of water, so it's no surprise that water conservation strategies get a lot of coverage in the article below, but unfortunately recovery of CO2 from fermentation receives only passing mention, and as usual the elephant in the room - the electrification of process steam - goes unmentioned.
