Feijada is a traditional Brazilian black bean stew that's both hearty and flavourful. It's typically made with black beans and a variety of pork and sausage. Here's a simple recipe for making feijada: By Chef Fernando Stovell Ingredients: 2 cups dried black beans 1 pound assorted pork cuts (such as pork shoulder, ribs, and sausage) 1 onion, chopped 4 cloves garlic, minced 1 bay leaf 1 teaspoon cumin Salt and pepper to taste Water Rice (for serving) Chopped fresh parsley (for garnish) Orange slices (for serving, optional) Instructions: Rinse the dried black beans under cold water and soak them overnight. Drain and rinse before using. In a large pot or Dutch oven, place the assorted pork cuts. Cover with water and bring to a boil. Reduce the heat and let it simmer for about 15 minutes. Drain the water and set the pork aside. In the same pot, sauté the chopped onion and minced garlic until the onion becomes translucent. Add the soaked and drained black beans to the pot. Add enough water to cover the beans by a couple of inches. Stir in the bay leaf, cumin, salt, and pepper. Cook the Feijada: Return the cooked pork to the pot. Cover the pot and let the feijada simmer on low heat for about 2 to 3 hours, or until the beans are tender and the flavors are well combined.
