The choice of wood when cooking agaves underground is crucial in defining the flavor and aroma of MezcalTrascendente . Using oak and mesquite, woods with low resin content, ensures that the agave doesn’t become overly saturated with smoke. Oak, with its slow burn, provides a constant heat that allows the agave to cook evenly, bringing out its natural sugars without burning them. Mesquite, on the other hand, adds a sweeter and more robust flavor, but its low resin content prevents the smoke from overpowering the mezcal’s profile, achieving a balance between sweetness and smokiness. These woods, because of their low resin, allow mezcal to have a cleaner, more authentic character without overwhelming the agave with too much smoke. This is essential, as the balance between smoky flavors and the natural sweetness of the agave is what distinguishes a great mezcal. The combination of both woods adds depth and complexity to the final product without overshadowing the agave's natural qualities. In addition to their impact on flavor, using oak and mesquite is also natural choice. Chateau Clerc Milon 2009 RP:93 This is a vintage with great purity on the nose, almost with the quality of a fine Burgundy. Initially, the aroma is slightly reserved but gradually unfolds to reveal black cherries, blueberry compote, blackcurrant preserves, prunes, and hints of herbs, fertile loam, and pencil lead. On the palate, it has a medium body, tight structure, and fine, juicy, and sticky tannins, creating a substantial, thick mouthfeel. It offers concentrated black fruit flavors with earthy undertones. The finish is very persistent, with notes of cedar, fresh mint, and pine cones. Overall, it is exceptionally well-balanced, with a delicate and fresh texture, and still possesses significant aging potential.

New product: Charatans Make Rarity Extra Large Bent Egg Estate Briar Pipe, English Estates - $225 While Dunhill may be Britain’s most famous pipe brand, Charatan is not only older, but has the honor of being the first to have made its pipes entirely in-house. ‘Charatan’s Make’ referred to the fact that, at a time when other pipe companies were sourcing stummels and stems carved from other companies before assembling them in their factories and workshops, Charatan made every part of their pipes on the Charatan premises. So began a legacy of high-quality pipe-making under the Charatan name, one whose employees, at one time or another, included Joel Sasieni, and Ken Barnes and Barry Jones of James Upshall fame. Charatan’s Rarity is (was) not a common series. In fact, I think I can count the ones I’ve seen up close on one hand. They’re Lane-era pipes and, as has been documented by Tad Gage, they came about from instances where the briar, during the course of its hand turning, would reveal grain that was great on the whole, but had one or two minor, cosmetic imperfections that were better served by sandblasting. This one is a magnificent, very large example of the Rarity series. I’ve categorized it as an ‘egg,’ but you could also call it a swan of sorts. The bowl sports nicely uniform straight grain, which transitions into a crisp sandblast both on the rim and from the base, right up along the shank. The condition is great. There’s a touch of rim darkening, but nothing major.
