According to McKinsey & Company, innovation in business is "the ability to conceive, develop, deliver, and scale new products, services, processes, and business models for customers". With BEKIRI, I believe this means challenging existing perceptions of what luxury patisserie can be. The time is ripe for this. West African cuisine has undergone a remarkable transformation in the UK, moving from stigmatised to celebrated. This movement has paved the way for a new era of African gastronomy, extending beyond West Africa. This trend for African cuisine in the British (high end) dining scene has been discussed and documented by Mintel and Goldman Sachs and we can see the clear evidence with incredible restaurants like Stork Mayfair, Akoko, and Chisuru, to name but a few. I hope to contribute to this movement, carving a niche in luxury patisserie. African ingredients and flavours have been massively overlooked in this space. P.S. Premium or Luxury - what makes the difference? Part 2 Yesterday I finished with this question ... what makes these new "top wines" unique, or are they just better copies of the great classics? I think we have to categorize the world's most expensive wines in two chapters that may be able to present the topic in a more differentiated way Premium & Luxury wines What do both categories have in common? First of all, these wines are always extremely expensive, have the highest ratings from wine critics, are sought after worldwide and have a secondary market. As with all luxury products, there are winners and losers on this secondary market – and the Liv-Ex Index reflects this very well! And what distinguishes these two categories from each other? Luxury products are characterised by distinction, whereas premium products are characterised by their uniqueness and regional individuality. In my opinion these "great classics" are - the 1st growth from Bordeaux, Grand Crus from Burgundy, Barolo from Piemont, Champagne, Vintage Port and Trockenbeerenauslese from the Moselle valley. I would add the following regions as they have a premium reputation of more than 50 years - Napa Valley, Brunello di Montalcino, Hermitage & Côte Rotie and as single wines Sassicaia and Grange. In recent years, new premium wines have emerged that do not come from the classic regions, but fulfil all the characteristics of a premium wine – uniqueness, regionality, high ratings and the highest reputation in the target group! A very good example is the renaissance of top wines from the Loire – to name just Clos Rougeard – or the new dry premium wines from Germany, with the Keller winery and its G-Max at the top. But there is also good news for the "normal" wine drinker – premium wines are not only available in the top price segment! I would therefore like to expand the premium wines to include a category that could be called "new classics". These wineries come from regions with a long winemaking tradition, have a clear DNA, are highly rated internationally, but have remained relatively inexpensive. The Iberian peninsula, with a sea of outstanding premium wines, Austria with Blaufränkisch, Italy, especially with the renaissance of Chianti Classico and the wines from Mount Etna, are worthy of mention here. This category will certainly grow massively in the coming years, as more and more winemakers are reflecting on their origins and traditions and no longer emulating the "untouchables". We can look forward to discovering which regions are worth exploring!

“The 2013 is a huge wine”... ...says Antonio Galloni about the 2013 Salon, which he recently re-tasted and gave 99 points! The 2013 is certainly one of the best Salon releases, and with a reduced price, the time to invest seems extremely attractive. Although the wine market has been turbulent, the Liv-ex 100 index is finally showing positive trends for the first time since March. Add to this the fact that the last ten Salon vintages that have been on the market for at least five years have yielded an average return of 66.2% in the last five years. One of my favorite brand stories. Sharing from Historical Flash Back on Facebook: The original Michelin Man from 1898. The Michelin Man is white because rubber tires are naturally a grey/white color. It was not until 1912 that carbon chemicals were mixed into the white tires which turned them black. The change was structural, not aesthetic. By adding carbon, tires became more durable. Michelin also began reviewing restaurants so that more people would travel further distances in their cars to eat at these restaurants. This in turn would wear down their tires faster, and force them to buy more. The "Bellevue" dilemma I occasionally purchase “Chateau Bellevue” from my local supermarket. It is a pleasant, quaffable wine with consistent taste and flavors, year in and year out. And it usually comes at a fair price. Yet, if I don’t pay attention, I might pick up the wrong one from the shelves. The problem is that “Bellevue” (“Beautiful view” in English) is such a common name (in France) for “a property with a nice view” that there is a plethora of “Chateau Bellevue” produced from various regions of France, and, of course, with the same or similar spellings. There are at least four or five in the Bordeaux area already. Therefore, the dilemma is that if someone asks you to buy a bottle of “Chateau Bellevue” without providing any details, and you try to search for it on the internet, you'd probably be overwhelmed by the choices and frustrated because you wouldn't know which one to choose. Moreover, to complicate the situation, “Chateau Bellevue” or “Bellevue” has been so widely used to name chateaux, estates, and other properties you can even find it in other countries like the US and Lebanon. Writing it in French definitely gives the name a certain "je ne sais quoi" that makes it more romantic and glamorous. 😉😁👍🍷 Here is a non-exhaustive list (in no specific order): Château Bellevue (Bordeaux, France) Château Bellevue (Bordeaux Supérieur, France) Château Bellevue (Médoc, France) Château Bellevue (Saint-Emilion, Bordeaux, France) Château Bellevue (Morgon, Beaujolais, France) Chateau de Bellevue (Val de Loire, France) Château Bellevue (hotel, restaurant, spa, Gers, France) Chateau Bellevue (event venue in Austin, Texas, USA) Chateau Belle-Vue (Haut-Médoc, Bordeaux, France) Chateau Belle-Vue (a winery in Bhamdoûn, Lebanon) So “which ‘Chateau Bellevue’ do you buy?" you may ask. I usually buy the one from the Médoc (3rd on the list above), produced by Lassalle Yves et Fils.
