Instead of going to waste, this pulp is being rescued and turned into nutrient-dense and delicious snacks! Juice pulp contains 95% of produce’s fibre, and is packed with nutrients, making it the perfect base for chips. All of the remaining pulp is used for animal feed–making this a 99.8% zero-waste facility. There is also a wastewater treatment plant on site to ensure that the water used for washing the produce and machines can be repurposed or sent back to the city. 🌾 From biryani to risotto, paella to tahdig, rice makes up many staple dishes. It serves as a cultural touchstone, shaping traditions, rituals, and culinary identities for diverse communities all around the world. More than 3.5 billion people eat it regularly and for many, it's not just a source of sustenance, but an integral part of life. According to the Food and Agriculture Organization of the United Nations (FAO), a staple food is consumed regularly and provides a significant portion of the energy and nutrients in a population's diet. Rice IS a staple. But the significance of rice extends far beyond the kitchen table. It's a cornerstone of global trade and economic development. 150 million smallholder farmers depend on the production of rice and for 3.5 billion people rice is a life source. However, at every stage of rice production waste occurs. Rice should be cultivated with maximum resource efficiency in mind. Instead of following a linear production system, circular rice maximizes every part of the plant for productive uses reducing waste considerably. Rice is consumed on a monumental scale. The more we produce the more we waste. This week we will explore what exactly is wasted, the implications of this waste, and solutions to recapture valuable resources. Leave it in direct sunlight and you’ll have an abundance for your next nutritious salad! 🌿Mint is an easy herb that loves the sunlight. Just put a three inch clipping in a pot of damp soil and leave on your kitchen window sill. Within a few weeks and your mint plant will be flourishing. 🧅Onion tops can be placed directly into the soil, either in a deep pot or straight in the garden, water when needed and in three weeks it’ll be sprouting leaves.
