This video I created captures the essence of Kakheti, the heart of Georgian winemaking. 🍇🍷 The Republic of Georgia, nestled in the Caucasus, holds a rich history as the birthplace of wine. It's a region where vines have intertwined with the land for millennia, and the grape harvest is a communal celebration. In bustling Tbilisi, everyone seems to have relatives in the countryside. When harvest season arrives, families and friends converge on the vineyards. The grape harvest isn't just about yield; it's about connection. Children go and help their relatives with the harvest, not with an expectation of compensation, but a good hardy meal. Upon completion of the day's work, they all gather to enjoy a grand feast with friends and family. A table laden with local delicacies and, of course, wine. 🍽️🍷 Georgian wine embodies the very essence of its terroir—the soil, climate, and spirit of the land. The wine is made in a traditional clay amphora, the kvevri, which doesn't allow the vessel to impart a significant flavor on the wine. Instead, you are generally greeted by heavy tannins and a unmistakably pure expression of the fruit itself. This is largely due to the fermentation process where the skins and stems are left on to ferment, leading to white wine grapes creating an 'amber' skin contact wine. Although there are some wineries now making wines in the European style of using oak barrels, the kvevri lives on as a testament to their tradition. Just as the kvevri is a pure expression of the fruit and terroir, Georgian culture with its ties to the land is a refreshing change in perspective and showcases a different culture. One that like its wine, is reflective of its land of origin. In Mexico “Corn” is the basis of all our gastronomy, it is and will continue to be the food par excellence for all of Mexico. Corn is “King” from Baja California to the Yucatan peninsula and down to Central and South America. In our Yucatan region, Corn is considered vital, an element of the worldview of the indigenous peoples, it is loaded with symbolism, history, legends, and creation, corn is tradition, and it is life. The Maya farmers in our región thank the god Kili’ich Ixi’im (god of corn) for the first harvest of corn in a ceremony offering corn foods such as sa’ (atole), Chakbil naal (boiled corn) and Pibil nal (corn cooked underground) in a ritual of ancestral Maya customs. Corn is life, it is art, flavor, smoke, aromas, traditions, and culture, it is past, present, and future… How many delicious dishes and drinks have been created out of Corn? . PROJECTIONS FOR PISCO As lovers of Pisco, we have some goals that we would like Pisco to achieve. One of them is to make Pisco, gastronomy, and Peruvian wine a unified team. We want one of our Pisco cocktails to be the star, accompanied by a dish from our cuisine served with a wine from our land. Additionally, we want to see the best spirit in the world offered with dessert. It's time for this to become a custom in Peruvian restaurants. Beyond the gastronomic realm, we hope that the new authorities of the Regulatory Council for the Appelation of Origin Pisco will be selected to continue defending our National Heritage, thereby conclude with the modification and proper publication of the Pisco Appelation of Origin Regulations. We need to continue researching and looking for historical information in notarial protocols in Ica, ancient documents found in the National Library. This requires funding, as historian Lorenzo Huertas constantly reminds us that these documents are being lost & must be digitized. We need to continue working on Pisco grapes to find out which variety was referred to as "Italia" (Italy), in the 19th century & how it differs from A. Pirovano, which arrived in the early 1900s. We also need to find out when and by whom the Pisco Sour, Chilcano de Pisco, Capitan, (Captain), and other cocktails were created & what the correct recipes are. I once heard a professor say, "We need to go back to the fields." Planting Pisco grapes is crucial. I emphasize the excellent work carried out by the Cite Agro Industrial Ica. It's important to have affordable strains of all Pisco grape varieties ready to be planted; that is the way forward...
