What makes seed oils harmful? Most seed oils are very high in omega-6 linoleic acid, which is linked with inflammatory processes in the body. As a direct result of refined seed oils in processed foods, the average person's dietary intake of linoleic acid rose from around 1-2% of daily calories to nearly 10% during the last century. This is a massive and unprecedented shift in the human diet. Another reason seed oils are a problem is oxidation, a type of chemical reaction. Harmful seed oils are high in polyunsaturated fats, which rapidly break down into dangerous byproducts when heated during cooking, and even in the body following consumption. Oxidation is a major reason to avoid snacks, cooking oils, and restaurant-prepared foods that contain seed oils. Last but not least, refined seed oils are a major source of empty calories in modern diets.
