Day 2 of the series in which we do a deep dive into the world of BOH and highlight the importance of BOH for every industry. Today we’ll be talking about the Warewashing area. The term warewashing is used to describe the act of collecting and washing kitchenware which were used during the preparation, serving or storing of food. This can include things like plates, silverware, bowls, pans, glasses, pots, kitchenware, trays etc. Under this process, all the dirty items are collected at a particular location where they are scraped, stacked, washed, rinsed, and sanitised. Once sanitized all the utensils are left to dry and then used in service again. The size of the warewashing area depends on the number of guests in the dining room at one time or the number of seat turns per meal period. Just the initial process of scraping and stacking the plates up waiting to be washed takes up to 60% of the dishroom counter space, the other 40% is occupied by clean dishes. Space also needs to be allocated for a 3-compartment sink which is essential for efficient scraping and rinsing. Another important equipment that takes up a minimum of 250 sq ft space is the Single-Tank Dishwasher (Here’s a list of similar types of equipment and their size: Single-Tank Conveyer System 400 sq ft, Two-Tank Conveyer System 500 sq ft, Flight-Type Conveyer System700sq ft ). Add to all this the space needed for loading dishes, room to wash pots and pans. There is method to our madness when we unpack a kitchen. Before we start putting things away, we have a plan first! What will be used most often? Where will it be used? What items are seasonal or infrequently used? Where does it make sense to place dishes, pots, & pans so they are easy to use and return? We consider all of these things before we start the put-away. We often use sticky notes to identify a "home" for each category before we begin, with the flexibility to move them if our plan needs minor tweaks.
