Beef stew is a hardy meal for a busy winter weeknight. This recipe makes a serving of eight. So, you can keep the leftovers for another day. I don't know if I would freeze it though because the #potatoes usually don't freeze well. But, could be used for the next day's lunch or even a quick dinner later on in the week. I didn't use a lot of salt in the recipe so use your judgment on how much salt to use. Read on to learn how I made this Slow Cooker Easy #Beef Stew Recipe. This recipe is a serving of eight. Ingredients: 2 3/4 LB Beef Chuck1/4 cup flourSalt and Pepper to taste10 oz. Peas (Frozen)Five #carrots (peeled, chopped into 1-inch pieces)Three large potatoes (peeled, chopped into 1-inch pieces)4 cups of beef brothTwo bay leavesOne large onionTwo garlic clovesOne tsp Worcestershire sauce1/2 tsp oreganoHalf a teaspoon basil1/2 tsp thyme Slow Cooker Easy Beef Stew Recipe Instructions: Cut the rest of the veggies and set aside. Add 1 tbsp of olive oil to hot cast iron skillet. Then, add 1 tbsp of extra virgin olive oil to a hot cast iron skillet. Then, dry and coat with flour/salt and pepper the beef chuck pieces and brown in the skillet. Slowly add the floured meat without crowding the pan. Turn them over once to brown the other side. After each piece turns brown, transfer the piece one at a time, to the slow cooker. I made delicious potato gnocci the other night for dinner, I had been watching Gino de Campo on the Amalfi coast! Here's the recipe I made... Potato Gnocci, Butternut Squash, Red Pepper & Sage Serves 4 450g floury potatoes 200g flour 25g self raising flour 1 med egg Good pinch of salt 2 red peppers 1/2 butternut squash 12 sage leaves, shredded slug of olive oil 50g of butter 50g grated Parmesan cheese Salt & pepper 1. Make the gnocci - peel & boil the potatoes until soft. Drain, allow to dry in the pan and then mash well so that there are no lumps. 2. Beat in the egg, then stir in the flours and salt until you have a soft, but not sticky dough. Divide into 3 or 4 pieces and roll each piece into a sausage shape approx 2cm in diameter. Cut into 2 cm lengths and gently roll over the back of a fork to create ridges. 3. Put a large pan of water on to boil. 4. Make the sauce - chop the squash & red pepper into 5mm dice. Add a slug of olive oil to a large frying pan and fry the vegetables over a medium high heat for about 10mins to cook. Add the shredded sage, butter, taste & season. 5. Cook the gnocci in the boiling, water. When you put them in the pan they will sink to the bottom. Wait until they rise to the top, allow to simmer for a couple of minutes, then scoop out with a slotted spoon into your pan of sauteed vegetables. Fry and sizzle for a few minutes on a high heat, then spoon into bowls, top with the grated Parmesan cheese and serve. Baked Salmon w/ Skillet Cauliflower & Zucchini Makes 1 serving: 1 lean serving 3 greens 3 condiments Ingredients: 6.5 oz raw salmon ~Yields 5 oz cooked (1 lean) 1 cup (4.38 oz) cooked riced cauliflower rice (2 greens) 1/2 cup (3.17 oz) cooked diced zucchini (1 green) 1/4 tsp ground pepper (1/2 condiment) 1/8 tsp sea salt (1/2 condiment) 1 tbsp fresh thyme (1 condiment) 1 tsp lemon juice (1/2 condiment) 1/2 tsp minced garlic (1/2 condiment) 1 sliced lemon wedge as garnish Directions: 1. Preheat oven to 400 degrees 2. Line cooking sheet with tin foil. On that sheet lay out salmon and season with half of all seasonings and 1 tsp lemon. Top salmon with lemon wedge as garnish for cooking. 3. Bake for 8-10 minutes. 4. Meanwhile in a pan, sauté veggies with the other half of seasoning. 5. One cooked, serve and enjoy.

Braised Chicken Thighs with Cabbage Tender chicken thighs cooked with sweet, caramelized cabbage in a rich and flavorful sauce. Comfort food at its best! 🥬🍗✨ Ingredients: 4 chicken thighs 1/2 head cabbage, shredded 1 onion, thinly sliced 2 garlic cloves, minced 1 cup chicken broth 1 tbsp apple cider vinegar 1 tbsp olive oil 1 tsp paprika 1 tsp dried thyme Salt and black pepper to taste Directions: 1. Age Backwards MONGOLIAN BEEF I love Asian food. There’s no need to feel deprived of favorite foods when living ketogenically! Any recipe can be adapted to fit. A little ingenuity is all that’s needed. 1 lb ground beef 1 teaspoon salt 1/2 teaspoon black pepper 1/3 cup tamari or soy sauce 1/4 cup beef broth 2 teaspoons rice vinegar 2 drops liquid stevia 1 tablespoon arrow root 1-inch piece ginger, grated 4 cloves garlic, minced 3-4 green onions, sliced INSTRUCTIONS In a small bowl, whisk together soy sauce, broth, rice vinegar, stevia and arrow root Set aside. In a large skillet, brown ground beef over medium heat, seasoning with salt and pepper. Reduce heat to medium-low and add garlic and ginger to pan. Let cook until fragrant, just 2-3 minutes.
