Do they seem anxious or in some way relieved? If so, then anticipate this now gathered sense of relief that they feel, by offering them something that will switch them from being 'tight and buzzy' into 'warm and fuzzy' - with a glass of fizzy. Frame it and say it, just like that. Be playful with them all the while trying to relate to their sense of relief (that they have finally arrived at your restaurant and ready to reeeeeelax). This style of engagement is more often than not met with the same level as warmth that you give them and therefore, as a direct consequence, trust and expectation is now in your hands. This now means, you have their attention in a way that should allow you, to start talking to them about the 'new wines' you have on, or the 'wine of the week' or that rascal glass of Passarina you tasted before dinner service with your team. It starts and ends with people. The wine - well that's just the thing that gives them satisfaction.
