I had once heard of an internal campaign byline of operational excellence in a hospitality corporate: Addition, Subtraction, Multiplication and Division; It was a such a simple message, easy to communicate and implement: (1) Addition: Chinese dosa (adding noodles to dosa) (2) Subtraction: Diet dosa (subtracting/minimizing oil from dosa) (3) Multiplication: Family dosa (multiplying 4-5 individual dosas into a big one one for the family) (4) Division: Mini idlis (dividing the bigger idlis into several small idlis). I think all of them have both efficiency and innovative dimensions. There is novelty, there is branding. They engage the consumers with a new value proposition, particularly the perception value.

Why would people want to eat such small little idlis, when the normal larger idlis are equally tasty?
Yet every restaurant I have visited in Tamil Nadu, over the past six months, says that mini-idlis are amongst their bestsellers.
