Vanilla Planifolia Vanilla Planifolia is the most common species of the vanilla orchid. It is the first species of vanilla orchid— the plant that all vanilla roots can be traced back to. The pods host vanilla caviar emitting a rich, familiar vanilla flavor and aroma. It is the more potent vanilla variety and easily infuses a deep, earthy, vanillin flavor into any dish. Vanilla Tahitensis Vanilla Tahitensis is a very close cousin of Planifolia. It is named after the island upon which it’s commercial cultivation began, though its origin is debated among botanists and vanilla enthusiasts. Some claim it was intentional hybridization, others believe it was a natural evolution, and there are scientific research studies that suggest it was a bit of both—a natural hybridization between Vanilla Planifolia and Vanilla Odorata, which occurred in Maya cacao forests. Regardless of how Vanilla Tahitensis came to be, pastry chefs all over the world would be at a loss without it. It is prized for its subtle sweetness and unmatched floral properties. Vanilla is a wild orchid, native to Mexico. Its beans have been used for more than 2,000 years by the Mayans and Aztecs to flavor and sweeten their cacao beverages. In 1841, 22 years after the vanilla orchid was introduced to Bourbon Island (now known as Reunion Island), young slave Edmond Albius discovered a technique to pollinate the flower by hand. He managed to identify which was the flower’s male organ and pollinate it using a small splinter of wood. A few days later, the flower transformed into a vanilla bean… Vanilla is a member of the orchid family, it grows on other plants for physical support. Vanilla plants can grow 15 to 20 meters long and 1 to 2 cm in diameter, climbing tree trunks using tendril-like roots at the base of each leaf. These roots are thick and green, measuring 12 to 25 cm long and 5 to 8 cm wide. the plant’s fruit, which measures 10 to 27 cm long and 8 to 15 mm in diameter. It reaches maximum size after 2 months, but it will only ripen after 8 to 9 months. Their oily pulp contains a significant number of dark black seeds and provides the vanilla’s scent. Here are the 3 main varieties of vanilla grown in the world Vanilla Planifolia, or “Bourbon vanilla”, is mainly grown in the Indian Ocean. Its natural vanillin content and spiced, woody taste have made it the leading variety. Vanilla x Tahitensis is grown in Tahiti, French Polynesia, and in New Guinea. It has a particularly floral, aniseed-tinted flavor Vanilla Pompona originates from Central America. Its very long (up to 27 cm) and plump beans have given it the nickname of “banana vanilla”. It has sweet, floral and fruity notes. Common myth of oolong teas: the higher the tea estates, the better the quality. When talking about oolong teas, it is commonly seen that the height of estates is widely promoted, and such kind of “higher and higher altitudes” always endorse the quality, which gives viewers wrong impression that the altitude decides the quality. But if the oolong tea quality is truly decided by altitudes, we could simply find the highest peaks to grow teas and harvest the best quality in the world. Easy and simple! Funny thing is, marketing tempts to use part of the truth while avoid other crucial conditions. For those who want to realize oolong teas further, below are those crucial conditions: 1. Height does influence the growth, but it depends on cultivars. For example, planting Mily oolong in places higher than 1,300 meters will only get lousy results. 2. Height does influence the flavor and creates a special note in the finished oolong tea on the condition that if this tea is properly oxidated. 3. In Taiwan, estates higher than 1,600 meters (only a general description) face common problems of (1) very few sunlight (2) higher humidity, thus the oxidation conditions can’t compete with teas from lower altitudes. 4. Generally, the best quality of high mountain oolong teas are from estates located at heights between 1,000~1,400 meters (again, depends on cultivars). Teas form this segment have strong fragrances (due the sufficient sunlight) and reviving notes (due to the altitude). Oxidation is the key of oolong teas, and the sunlight withering is the core spirit of the oxidation, while other conditions (eg: heights, cultivars, etc) are only supportive elements. In fact, it is important to note that a vanilla bean measuring 17/18 cm is generally more valuable than one measuring 13 cm. A longer bean, such as an 18 cm one, generally contains a greater quantity of vanillin, the substance responsible for its aromatic qualities. The higher the vanillin content of a vanilla bean, the more complex, powerful and intense its fragrance. The vanilla bean's size therefore has a direct influence on its quality.
