Completely agree with your post, Scot. Must give the tools to F&B teams to operate for creating memorable moments for their customers. During my time in hotel business and now working as a supplier, i saw so many service staffs, culinary staffs without forget the stewarding staff working in a poor condition and the minimal manpower.
I agree with you!! F&B can contribute 55% revenue from the total composition of hotel revenue if the hotel has a large ballroom and more than 10 meeting rooms. Currently, many hotel operators make F&B as the core and center of development of their management philosophy. In conclusion, the presence of F&B in hotels is very important, especially for properties that want to become a leading and trusted brand

It CAN and SHOULD do all of these things, IF it is treated as a true profit center and stand alone business that must succeed!! Then the motivation will be there to be creative and work hard for it. If it just treated as a cost center amenity, it will never be an attraction or truly drive value to the guest or the business!
