All it has are volatile molecules floating in the air. It's only when these molecules come into contact with our olfactory receptors that these molecules become represented as neural signals. Then... the brain interprets those signals and creates the perception of aroma or even flavour. So you see... your brain is lying to you! Flavour is just an illusion - a carefully crafted trick of the brain that combines sensory inputs like aroma, taste, and texture with memory, culture, and emotion. It’s why no two people experience the same tipple in quite the same way. Understanding this simple truth is transformational when it comes to designing and hosting consumer events. A fascinating study from the Behavioral and Brain Lab at the Free University of Languages and Communication in Milan, Italy, has revealed an unexpected delight when it comes to eating pasta. Involving a diverse group of 40 participants aged 25 to 55, researchers set out to explore how our physical and neurological responses vary across different activities. Researcher found 200mg of caffeine improve convergent thinking skill seeking a specific solution to problem that a correct answer. #DevelopingTaste: A Journey, Not a Quick Fix As I dive deeper into the bar industry, one thing becomes increasingly clear: developing taste is a process, not a magical moment that happens overnight. It’s a gradual shift in how we approach familiar choices and the elements around us. This process isn’t about watching one movie or reading one article and expecting immediate transformation. It takes patience, practice, and a methodical approach. Here’s how I’m navigating this journey: 1️⃣ Understand How We Think The first step is understanding how our minds work. For this, I’ve turned to Chris Paley’s book, “Unthink: 100 Experiments That Will Change the Way You Think”. If we want to control or refine something, we need to understand the mechanics behind it. This book provides insights into how our subconscious shapes our decisions, offering a solid foundation to build on. 2️⃣ Engage in Visual Analysis Active effort is essential. Whether we’re refining taste in fashion, design, or in my case, cocktail presentation, understanding the differences and relationships between elements is key. I focus on analyzing the details—what grabs my attention and why. For example, when modern cocktail presentations catch my eye, I note what makes them stand out compared to traditional styles. 3️⃣ Broaden Your Perspective To avoid relying on a single source of inspiration, I immerse myself in a variety of visual cultures—from different countries to different eras. This diversity enriches the process and helps sharpen my analytical skills further. The goal is to pinpoint what resonates with me and what doesn’t. 4️⃣ Learn from the Pros Observing professionals is non-negotiable. Without this step, there’s a risk of stagnation. Watching experts in action provides clarity and inspiration, making the journey smoother and faster. Developing taste, especially in the bar world, is about more than just mixing drinks or choosing the right garnish. It’s a process of understanding, exploring, and constantly pushing boundaries.
