I've noticed one interesting trend really take off in QSRs recently... The rise of sauces. People LOVE their sauces—in fact, recent data from Technomic’s Flavor Consumer Trend Report showed that 34% of consumers even consider available sauces when deciding on a restaurant. And QSRs are absolutely capitalizing on this. In just the past few months, we've seen: 🥣 Taco Bell's new "Avocado Verde" sauce for its Cantina Chicken menu. 🥣 Zaxby's new "Zaxtail Sauce" to complement their new Southern Fried Shrimp. 🥣 McDonald's new "Savory Chili WcDonald’s Sauce" to go along with their anime-inspired WcDonald’s campaign. Nearly two-thirds of Americans consume mushrooms, counting fresh mushrooms bought in the produce department, mushrooms included in restaurant meals as well as mushrooms used as an ingredient in frozen pizzas or a jar of spaghetti sauce. The vast majority of mushrooms eating occasions, 80%, reflect usage as an addition, topping or ingredient to another base dish, such as pizza, a burger or salad. Consumers say that 95% of these occasions had mushrooms included in the original meal, whether bought in-store or at a restaurant, whereas 5% added mushrooms to the meal leftovers. Mushrooms have great versatility and add umami – a savory, meaty flavor – adding depth and richness to all kinds of dishes, ranging from soups and sauces to stir-fries and salads. Chef SJ Nel from our Goatshed Restaurant demonstrates a simple and satisfying recipe that utilizes our Blue Rock cheese, perfect for creating a delightful appetizer that will gather the whole family around the table. Sage and Blue Cheese Shortbreads Ingredients: 150g chilled butter pieces 175g sifted plain flour ­ 3 tbsp finely chopped, fresh sage 100g Fairview Blue Rock cheese 65g chopped, toasted pecans 100g rindless goat’s cheese 4 tbsp single cream Chopped, toasted pecans Small fried sage leaves   Method: 1.      In a food processor, combine butter, flour, and fresh sage until the mixture resembles breadcrumbs. 2.      Add the Blue Rock cheese to the mixture and process until tiny lumps start to form. 3.      Transfer the mixture to a bowl and stir in the pecans. 4.      Gently knead the mixture to form a dough, then divide it in half. 5.      Roll each half into a log, approximately 5cm wide. 6.      Wrap the logs tightly in cling film and refrigerate for about 30 minutes, or until firm. 7.      Preheat the oven to 180°C. 8.      Unwrap the chilled logs and slice them into 5mm thick rounds. 9.      Lightly butter a baking sheet and place the slices about 5cm apart. 10.    Bake for 10-12 minutes, or until golden brown. 11.    Transfer the baked shortbread slices to a wire rack to cool. For the topping: 1.      In a separate bowl, use a wooden spoon to cream together goat's cheese and cream until smooth. 2.      Spread the goat's cheese mixture over the cooled shortbread slices. 3.      Top with optional chutney, extra toasted pecans or small fried sage leaves.' #cheeselover #bluecheese #lunchinspo #fairview
