We decided to let AI take the reigns on the art today for our duck fat washed Sazerac. This concoction sounds so wrong yet it's so right! Rich, nutty and it works so well with the herbal notes perfect for cool rainy days when you need something extra. 2oz Duck Fat Rye 1tsp Rich Simple (2:1 ratio) 1tsp Absinthe 3 dashes Peychauds bitters 1-2 dashes of Ango In a mixing glass with ice, add all of the ingredients except the absinthe and stir until chilled and slightly diluted. In your glass add the absinthe and rotate to coat the glass. You can dump the absinthe if it's not your thing, or leave it for extra EXTRA. Add ice and garnish. For the duck fat rye, we're fans of Rittenhouse. Add a few ounces of room temp rendered duck fat to a mason jar. Make sure it's at least 375ml to about 2oz of fat. Shake to break apart the duck fat and let sit in a cool dark place. Place in the freezer overnight. Remove from freezer and pour through a sieve to remove the large particles then strain again through a coffee filter. Simple things get simply lost. What's your method for beating an egg? For me it's : Crack the Egg: Crack the egg on a flat surface to avoid getting shell fragments into the egg. Use a Bowl: Crack the egg into a clean bowl. This allows for easy mixing and prevents any unwanted bits from getting into your dish. Whisking: Use a whisk or a fork to vigorously beat the egg. Start with a circular motion, then incorporate a back-and-forth motion. This helps to break up the egg whites and yolks thoroughly, creating a uniform mixture. Incorporate Air: Continue whisking until the egg becomes frothy and slightly thickened. The more you whisk, the more air you'll incorporate, resulting in a lighter texture. Technique: Beating the egg in a circular motion and lifting the whisk slightly out of the mixture as you beat it can help incorporate more air. Consistency: Stop whisking when the egg reaches a uniform consistency with no streaks of yolk or white remaining. The key is to whisk vigorously and consistently to achieve the desired texture.
