Brunswick Stew Ingredients: 1 lb shredded cooked chicken 1/2 lb pulled pork 1 onion, chopped 3 garlic cloves, minced 1 can (14 oz) diced tomatoes 4 cups chicken broth 1 cup corn kernels 1 cup lima beans 2 tbsp Worcestershire sauce 1 tsp smoked paprika 2 tbsp butter Salt and pepper to taste Instructions: In a large pot, melt butter over medium heat. Sauté onion and garlic until softened. Add shredded chicken, pulled pork, diced tomatoes, chicken broth, corn, and lima beans. Bring to a simmer. Chile Rellenos 🌶️ Yield: 4 Serving Per Serving: 1 Lean, 1.5 Greens, 1.25 Condiments Ingredients: 12 whole green chiles split downside 6 egg whites 3.5 ounces cooked, shredded chicken 12 oz part-skim mozzarella ½ tsp cream of tartar 1 tsp garlic powder 1 tsp onion powder Directions: Preheat the oven to 400. In bowl, mix 10 ounces mozzarella, chicken, 1.2 tsp garlic powder and ½ tsp onion powder. Using KitchenAid mixer, whip egg whites on high w/cream of tartar, ½ tsp garlic powder, and ½ tsp onion powder until stiff peaks form. Took 5 minutes. Spray baking dish w/cooking spray. Spread half the egg mixture on the bottom of the pan. Place 1-2 tbsp cheese mixture onto chiles. Fold chile around filling and press into egg mixture, make sure mixture envelops the sides of the chile. Spread remaining egg over chiles, sprinkle w/ cheese. Cover w/foil, bake 30 minutes, Remove from oven, increase temperature to 450. Remove foil, bake for 10 minutes until the cheese bubbles. #optavist #HelloAfterTheAfter

Tomato Basil Soup Ingredients: 8 ripe tomatoes, chopped 1 onion, chopped 3 garlic cloves, minced 4 cups chicken broth 1 cup heavy cream 2 tbsp butter 1/2 cup fresh basil, chopped Salt and pepper to taste Grated Parmesan cheese for garnish Instructions: In a large pot, melt butter over medium heat. Sauté onion and garlic until softened. Add chopped tomatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes. Use an immersion blender to puree the soup until smooth. Let's do this! 15 ounce canned artichoke hearts sliced in half, gently flattened, and patted dry 1 cup vegetable oil 1 tablespoons parm cheese for after frying kosher salt after frying 1/2 large lemon cut into wedges 1/2 cup flour 1/2teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon garlic powder 2 large eggs beaten 2 tablespoons parm cheese grated 1 1/2 tablespoons parsley Instructions * Drain artichokes, cut in half, and gently flatten. Pat with paper towels to remove excess water. * Heat oil (use enough to fill pan at least 1 inch high) in a cast iron or heavy pan for frying. * Coat the artichoke hearts in the flour mixture and shake off the excess. * Dip the coated hearts into the egg batter and fry for about 3 minutes per side until golden brown on each side. * Place finished fried artichoke hearts on a rack to drain. * Top with salt and cheese. ✌️Serve immediately or keep warm in a low temp oven. If you’re looking to spruce up your burgers with something totally new, try out these slightly sweet and tangy sliders! Serves 12 Ingredients: • 1 egg • ½ cup flour • ½ cup panko breadcrumbs • 1 teaspoon onion powder • 2 teaspoons dried parsley or thyme • (1) 8-ounce goat cheese log • Olive oil, for frying • 1 cup balsamic vinegar • 12 premade slider patties • 1 cup raspberries, smashed • 12 slider-sized buns Instructions: 1. Line up three small bowls for dredging. In the first bowl, gently whisk an egg. In another bowl, add in the flour, and in the last bowl, combine the panko breadcrumbs, onion powder, and parsley or thyme. 2. Remove the goat cheese log from the fridge, and cut into 1-inch discs. Add about 2 inches of oil to a sauté pan, and bring to medium-high heat. 3. Bread the goat cheese by coating each piece in flour, then egg, and, flour, egg, and then breadcrumbs. Place gently into the sauté pan, and fry until golden brown. Remove from the pan, and place on a paper towel to dry some of the grease. 4. In a small saucepan, bring the balsamic vinegar to a boil, and reduce until thickened. 5. Season the patties, if desired, and then grill for three minutes per side. While the patties are grilling, use a fork to smash the raspberries in a small bowl. Easy Omelette 1 1/2 cups egg beaters, 1/2 cup cheese 1.27oz raw mushrooms, 1.55 raw broccoli 3.17 tomato 1 1/2 oz of avocado 1 serving: 1 lean, 3 green, 1 hf You still have three condiments so check the condiment guide if you still have some left for your day. Cook the mushrooms for a few minutes, add broccoli and sauté until you like them. Take everything out of the pan and wipe it down. Beat egg beaters. Loaded Chili Dog Tater Bake Ingredients: - 1 pound ground beef - 1 can (15 oz) chili - 1 package (32 oz) frozen tater tots - 1 cup shredded cheddar cheese - 1 can (8 oz) crescent rolls - 1 cup diced onions - 1 cup diced hot dogs Instructions: 1. Preheat oven to 375°F. 2. In a skillet, cook ground beef until browned. Add chili and simmer for a few minutes. 3. In a 9x13-inch baking dish, layer tater tots, chili mixture, cheddar cheese, onions, and hot dogs. 4. Top with crescent rolls and bake for 25-30 minutes until the crust is golden brown. 5. Let it cool for a few minutes before serving.
