This list is the @newyorktimes T 25 series, which highlights significant achievements in the worlds of design, literature, fashion, architecture and food. Previous debates about where to eat right now were confined to major cities like Paris and Mexico City, but this time around, we wanted to see what we might learn if we surveyed the culinary landscape across an entire food-crazed country. We chose pasta because it’s the food most associated with Italy, and because it’s the subject of T’s new Travel issue. It’s also the staple that reveals just how much Italian cooking, even in 2024, remains firmly anchored to a specific place. While most countries have regional fare, Italy is particularly fixated on a recipe’s exact provenance — the town, the valley, the strip of coastline — which is why you’ll often find different pasta shapes or sauces, even over the span of just a few miles. https://lnkd.in/eD6URrnA

Exploring public dining models that address health inequalities, social isolation and planetary wellbeing.
🤷♀️ Would the British Restaurants that fed people across the social divide (up to 600K per day)and served well-balanced, nutritious meals during WW2 attract those numbers today? Public Canteens, as highlighted by Nourish Scotland in their recent report, are a 'classic public health intervention' with shared meals offering limitless opportunity for improved wellbeing. BUT whilst few would disagree with their merits, how many of us would choose to participate on a regular basis, how would this fit in with our busy lives? Whatever the answer, it is likely to be complex and will undoubtedly throw up more questions than answers. I think a great place to start is to look around the world to learn from those societies that are better fed and better connected. Food as an equaliser was the mantra that underpinned my second restaurant. Whilst eating out is often regarded as a treat, I see it as a necessary part of a well-rounded life and the world I want to live in is one in which the sharing of food is available to us all. Eating out and with others is good for our health and that of our communities. This article is years old but it it describes a way of eating that resonates with the shift I would love to see in our food culture. This line in particular fills me with warmth and hope. "In most Istanbul neighbourhoods, the working class sets the culinary bar, and they set it high. They want it fast, fresh, cheap and as close as possible to their mothers’ recipes." According to the findings of the Public Cleanliness Satisfaction Survey 2023 conducted by SMU, more than 80 per cent of Singapore residents in 2023 indicated they were willing to go the extra mile to clean up spills or wipe down their tables after eating at food outlets like hawker centres or coffee shops because they feel that it is the socially responsible thing to do. Satisfaction with cleanliness of food outlets also jumped two percentage points to 85 per cent in 2023, compared with 2022. At a media briefing on 26 April to announce the survey results, the co-leads of the study said food outlets could consider piloting the provision of clean tablecloths or tissue paper on dining tables for patrons to wipe down tables after their meals. “Hopefully, over time, this habit will translate to other public places as well,” said the researchers, led by SMU Dean of Students and Professor of Sociology (Practice) Paulin Straughan and Dr Mathew Mathews, principal research fellow at the Institute of Policy Studies. #SMUResearch #publiccleanliness #cleanlinesssatisfaction #publichygiene ------------------------------------------ Follow us for updates on SMU's research!

NABAT (Neighborhood cafe) Nabat was born out of a love of plants and coffee. The owners, a husband-and-wife team, wanted to create a space where people could come together to enjoy both. They found a small, vacant storefront in a quiet neighborhood and set to work transforming it into their dream cafe. The design of Nabat was inspired by the natural world of the Arabic region that's why it adopted a soil color theme with balancing the ratio between greens and soil. The owners even installed a small greenhouse in the back of the cafe, where they grew their own herbs and vegetables. In addition to coffee, Nabat also serves a variety of plant-based dishes. The menu features salads, sandwiches, and bowls, all made with fresh, local ingredients. There are also a variety of pastries and desserts, all of which are vegan. Nabat is more than just a cafe. It's a community space where people can come together to connect with nature and each other. The owners are committed to providing a space where everyone feels welcome, and they're always looking for ways to give back to the community. One of the ways that Nabat gives back is by selling planters. The planters are made from recycled materials, and they're all designed to be as sustainable as possible. The owners believe that everyone should have the opportunity to enjoy the benefits of plants, and they're happy to provide a way for people to do that. Nabat is a small cafe with a big heart. It's a place where people can come to relax, connect, and learn about the importance of plants. Is anyone else here a coffee enthusiast? 🙋🏻♂️☕️ I have a "customer success" reflection after the coffee cupping session at Kopenhagen Coffee. Just as everyone has a unique preference for their coffee—whether it's the taste & smell, processing method, roast level, or brewing style. Surely, baristas have their own preference too. Yet, a good barista needs to have an open mind to understand their audience's tastes and adapt accordingly. It's interesting to hear how they have their customer's preference in mind when they source, roast, and brew to meet the market demands while raising more appreciation for different coffee. In the same way, when developing and selling a product, it's crucial to deeply understand our target audience. We must engage with them and present our product in a manner that aligns with their preferences and needs. With our industry knowledge and expertise, we can gradually guide and educate our customers, helping them appreciate our product in ways they hadn't experienced before. Customer-centricity based on market maturity is key to fostering lasting relationships and achieving success! Thanks for hosting us Adrian Nicholas Tham! Learnt and appreciate coffee even more. Recently attended an exhilarating coffee cupping (aka coffee tasting) session at Kopenhagen Kapas which was an absolute delight!. We had seven different single-origin beans and two exquisite espresso blends to try. My favorite was the Columbia Muricio Duque - which had pink grapefruit, sweet and floral notes. Another highlight was also when their superb barista generously opened up a private stash of premium beans for us to taste, with the grand being a limited Eugenioides Columbia Finca Inmaculada (FYI the Eugenioides produces only 150 grammes of unmilled coffee per tree, with almost half the caffeine of an Arabica coffee, which makes the coffee taste virtually completely unbitter!!). We were exposed to roasting practices (thank you Adrian Nicholas Tham), and learnt about different processing styles of the beans. The whole experience was not only educational but also a lot of fun... Natalie Tan (陈雪愿), Bernard Leong Azim Pawanchik. If ever you're in the Bangsar neighbourhood I would definitely recommend a visit to Kopenhagen Coffee at Kapas Condominium - amazing coffee with excellent vibes.
