These brave souls simultaneously battled against two formidable forces: the vast global empire of foreign invaders with limitless wealth, muscle power, and control over global economies, and the local rulers who were revered as gods—Maharajas who ruled by heredity, not by merit, wielding the right to create laws and even take lives at their whim. In 1947, we achieved independence on paper, but our true fight for freedom and liberty continues to this day. What if India had not gained independence: The Flavour of Freedom As we celebrate 78 years of independence, it's worth reflecting on the everyday freedoms we enjoy, like savouring a cup of coffee. Had India not gained independence, our coffee culture might have been very different. Under colonial rule, India was primarily a producer of raw materials, with coffee largely grown for export and limited domestic consumption. Independence brought a shift, allowing for the growth of the domestic coffee industry. Indians began to explore different coffee varieties and brewing methods, leading to a vibrant coffee culture. The establishment of coffee plantations and processing units within India further fueled this evolution. However, that is not the case. Today, we enjoy the fruits of our nation's freedom—diverse coffee experiences that are uniquely our own. So, let's raise a cup to our country's independence and the rich coffee culture it has nurtured. Happy Independence Day!
