BOOK REVIEW Book Name: Unreasonable Hospitality (The Remarkable Power of Giving People More Than They Expect) Author: Will Guidara About the book: The author Will Guidara helmed one of the world’s best restaurant Eleven Madison Park as General Manager back in the days when the restaurant was struggling with 2 stars. Eleven years later the outlet had undergone certain changes in the way they extended hospitality to their guest that help the outlet earn 4 stars from New York Times and 3 Michelin stars and was named as the World’s Best Restaurant. In this book Unreasonable Hospitality, the author has shared his experiences of offering hospitality that was so memorable that it can be only described as unreasonable which brought great success to the restaurant. After one particular instance that happened at the restaurant where Will Guidara served 2-dollar hot dog from the cart outside their restaurant his perspective towards offering hospitality changed drastically. The reaction of the guest after that incident created a positive reaction and making people feel really good became a motto of the restaurant. Unreasonable Hospitality was all about extending hospitality by giving people more than they expect. Many food and beverage outlets around the world focus on the ambience, offering best ingredients and delivering best service but sometimes fail to deliver a memorable experience to guest for which they would want to come back to the outlet again. Serving best product is not enough the way you make people feel is more important. This book emphasizes on the fact that it is important to make people feel seen and truly welcomed. Apart from that the author has cleverly shared some interesting business tips of handling restaurant team and operation by blending restaurant smart strategies and corporate smart strategies to make an outlet successful. I would recommend this book to every student pursuing career in hospitality study and every individual working in a restaurant or who aspires to open a restaurant. #hospitality #hospitalitybooks #bookreview

Let’s define Speed of Service. People have pre-determined expectations for service and the experience in a restaurant. When do they get their order of drinks or food? Start with the most time-sensitive: QSR – 90 seconds to 3 minutes Fast Casual – 4-5 minutes Casual Dining – 12-14 minutes Fine Dining / Destination Restaurant – 30 minutes plus If more than 4 People are queuing, you are losing Sales.
