Insides of a packing house. I am often asked why packing houses are so big? Thing of all the items that need to be sheltered, sorted, cleaned, packed, refrigerated/stores, and shipped in a season. They need to be able to not only handle the volume of fresh fruit, have the ability to sort and pack, provide refrigeration , the boxes for the harvest, and even the miscellaneous farm equipment. During the off season, equipment is prepared and maintained to avoid any down time during the harvest. In agriculture, many crops arrive all at once. Some crops have harvest windows of just a few weeks. Some larger groves in South Florida, have morphed into multiple crops or staggered fruit trees. This also allows the farm to spread the production, costs, and revenue over the year. Some crops are ready to harvest over a large geographical areas. When that fresh fruit all hits the market at the same time prices tend to drop. Many of the larger growers will have multiple types of different fruits, or multiple varieties of the same fruit.
