LAB FACT FRIDAY! This one is for all the fans of Czech slow pours! This study evaluated physicochemical and sensory properties of Czech lager beers with varying original wort extract (OWE) values during a 6-month cold storage period. While OWE values didn’t impact certain parameters, cold storage maintained dissolved O2 and CO2, bitterness, color, and foam stability. However, total polyphenol content (TPC), turbidity, and sensory attributes were affected by storage duration. Until the 5th month, all samples displayed “very good” sensory characteristics, highlighting the importance of cold storage in preserving beer freshness and sensory quality for consumers. This suggests that maintaining proper storage conditions is crucial for professional brewers to ensure quality consistency.
