Chicken Pho with Pea Shoots A bowl full of nourishing, spice-filled broth, tender chicken, and an array of fresh garnishes Ivy Manning This flavorful chicken pho (a broth-based Vietnamese-style soup commonly containing rice noodles, bone broth, and meat) is infused with fragrant ginger, garlic and whole spices, then piled high with fresh herbs and delicate pea shoots for a hit of freshness. Pea shoots, we might add, are packed with vitamin A and vitamin C, so feel free to be heavy handed with them. It should be noted that pea shoots, like any vegetable, need to be cleaned. These #GrainFieldChickens Giblets Sosaties are giving us all the feels for #HeritageMonth ! Let’s get that braai going 😍 You will need: 500g x Grain Field Chickens chicken gizzards 2 tbsp olive oil 1 lemon (for juice and zest) 3 cloves garlic, minced 1 tsp paprika (smoked paprika works well too) 1 tsp ground coriander 1 tsp ground cumin 1 tsp chilli flakes (optional, for heat) Fresh herbs (parsley or thyme), chopped Salt and pepper to taste Skewers Method: In a large bowl, mix olive oil, lemon juice and zest, minced garlic, paprika, coriander, cumin, chili flakes, salt, and pepper. Add the giblets to the marinade, ensuring they're well coated. Cover and refrigerate for at least 1 hour (overnight is even better). Preheat your braai (grill) to medium-high heat. If using skewers, thread the giblets onto skewers. Grill the giblets for about 10-15 minutes, turning occasionally until they're nicely charred and fully cooked. The liver should still be tender but not dry. Once off the grill, garnish with fresh herbs and serve with lemon wedges. They pair well with #MagnifisanMaizeMeal Pap or a fresh salad.

𝑺𝒉𝒓𝒊𝒎𝒑 𝒁𝒐𝒐𝒅𝒍𝒆 𝑩𝒐𝒘𝒍🍤🥒 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬: 1 lb shrimp, peeled and deveined 2 large zucchinis, spiralized into zoodles 1 cup cherry tomatoes, halved 1/4 cup fresh cilantro, chopped 2 cloves garlic, minced Juice of 1 lime 1/2 tablespoons olive oil Salt and pepper to taste Red pepper flakes for optional heat 𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬: In a large skillet over medium heat, add olive oil and minced garlic. Sauté until fragrant. Add shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes per side. Season with salt, pepper, and red pepper flakes if desired. Remove shrimp from the skillet and set aside. In the same skillet, add zucchini noodles (zoodles) and sauté for 2-3 minutes until they are just tender but still have a slight crunch. In a large bowl, assemble the zoodle bowl by combining the cooked zoodles, sautéed shrimp, halved cherry tomatoes, and chopped cilantro. Drizzle lime juice over the bowl and gently toss everything together until well combined. Taste and adjust seasoning if necessary. You can add more lime juice, salt, or pepper according to your preference. If you like cooking shows, like MasterChef, you must have seen these fascinating fruits called finger limes (𝘊𝘪𝘵𝘳𝘶𝘴 𝘢𝘶𝘴𝘵𝘳𝘢𝘭𝘢𝘴𝘪𝘤𝘢). They are also called caviar limes because the inside has globular, pearl-like vesicles that resemble the appearance of caviar. As the summer approaches barbeques become a familiar site being Australian, we do it differently we pour wine or beer over the plate while food is cooking and the flavours are great, however I try to have the following herbs that will do well include borage, rocket, chervil, basil, dill, mint, coriander, parsley, oregano rosemary, thyme, and chives. Try not to be fearful when planting herbs as they particularly like close neighbours, and you can also plant herbs beside various plants as they make remarkable space fillers and accomplice plants. When they start to go yellow, Instead or chucking them in the garbage next time, give this a try!! These cubes of herby delight are so easy to make, they can be used in many ways once frozen.
