When life gives you lemons...in May make - Elderflower champagne 🥂🌻☘ It's that time folks.. In the making...so we promised some of you our recipe... We made 5 litres however we are sharing the method & recipe for 2 litres of lovely Bubbly 🌻☘ Remember to try get fresh flowers that have lots of yellow pollen. The pollen acts as a natural yeast. Here we go for 2 litres You will need 2 litres of water, use mineral water if possible. 6 heads of Elderflowers 200 g of castor sugar 1.5 tablespoons of cider vinegar 2 lemons, juice, rind & all 👌☘ Firstly boil the water, once boiled add the sugar. Allow the Sugar dissolve. You can stir it with a clean spoon. Now leave the sugar water mix cool to room temperature. In the meantime take a glass or pottery bowl and cut the flower heads into it with a scissors. Try remove as much stem as possible as the stems are slightly toxic. Don't worry too much as you will be straining the final mix. Now slice the lemons in half. Once your sugar water is at room temperature pour it over the flowers and squeeze the lemons into the bowl. You want the juice of two, then pop the left over lemons in. Now add your cider vinegar. Leave sit in a room covered with a tea towel for 2 day's. Then strain with a sieve and then strain again through a muslin cloth. Pour into glass bottles preferably ale bottles with a pop lid and leave sit out for two weeks, after day 2 you will need to burp the bottles each day so they don't explode!! Signed, Shrimp Lover Dear Lover, It’s not you. It’s a preservative called sodium tripolyphosphate – STP for short. STP is a commonly used for shrimp and scallops coming from the Orient and southeast Asia. I find it changes the textures so dramatically that even after prolonged cooking, shrimp and scallops still appear and taste raw. When buying seafood, read the labels and choose the ones without STP. A friend of mine asked me about the difference between common limes and the MAKRUT LIME. Here are some details of this wonder of nature! • There are different types of limes. On the one hand, there are the classic limes, such as the Gallega lime, or acid lime (Citrus Aurantiifolia) or the Persian or Tahiti lime (Citrus Latifolia). • However, the Makrut lime, also called Kaffir (Citrus Hystrix) has a unique personality. Its characteristics are as follows: • It has a very fresh, intense, fragrant and very pleasant fruity aroma, with herbaceous floral notes but at the same time acidic and with a slightly bitter background, more penetrating on the skin. Although similar to the taste of lemon or lime, Makrut has a very distinctive and unique personality. • Makrut lime leaves have a wider application in cooking (especially in the Thai kitchen). Making homemade elderflower cordial is a fun family activity if you have access to elderflower trees - and so is collecting the blooms. Serve with sparkling water for a refreshing drink 🍹 Ingredients 30 elderflower heads 1.7litres/3 pints boiling water 900g/2lb caster sugar 50g/2oz citric acid (available from chemists) 2 unwaxed oranges, sliced 3 unwaxed lemons, sliced Method -Gently rinse over the elderflowers to remove any dirt or little creatures. -Pour the boiling water over the sugar in a very large mixing bowl. Stir well and leave to cool. -Add the citric acid, the orange and lemon slices, and then the flowers. -Leave in a cool place for 24 hours, stirring occasionally. -Strain through some muslin and transfer to sterilised bottles. The cordial will keep for 2-3 months in the fridge. 🌻🍴 Cooking Sunflower Heads 🍴🌻 Have you ever wondered what to do with those large, vibrant Sunflower heads besides admiring their beauty? Believe it or not, you can cook Sunflower heads similarly to Artichokes, and the results are absolutely delicious! Here’s a simple and scrumptious recipe to get you started. Ingredients: 1 large Sunflower head (young, unopened buds are best) 3 tablespoons olive oil 2 cloves garlic, minced Juice of 1 lemon Salt and pepper to taste Fresh herbs (like Parsley or Thyme) for garnish Instructions: Begin by cutting the Sunflower head from the stem, leaving about an inch of stem attached. Remove any outer green leaves to expose the tender inner bud. Rinse the Sunflower head thoroughly under cold water to remove any dirt or insects. Bring a large pot of salted water to a boil. Add the Sunflower head and boil for about 15-20 minutes, or until the bud is tender when pierced with a fork. Similar to Artichokes, you want the inner parts to be soft and edible. While the Sunflower head is boiling, heat the olive oil in a pan over medium heat. Add the minced garlic and sauté until fragrant and golden brown, being careful not to burn it. Once the Sunflower head is tender, remove it from the boiling water and let it drain. Place the Sunflower head on a serving plate, drizzle with the garlic-infused olive oil, and squeeze the lemon juice over the top. Season with salt and pepper to taste. Garnish with fresh herbs like Parsley or Thyme for an extra burst of flavour. Pull apart the petals and dip them in the seasoned oil, just like you would with Artichoke leaves. Enjoy the tender, nutty flavour of the Sunflower bud’s core, savouring each bite! 🌻✨ Cooking Sunflower heads is a fantastic way to make the most of this versatile plant.
