Peer Facilitator Spotlight: Candyce Lucien Rusk , Cooking After Cancer facilitator The Happy Kitchen / La Cocina Alegre ® (THK / LCA ®) courses are first and foremost community spaces where class participants and class facilitators are peers who have experiences in common. “How I got involved was in 2010, I was diagnosed with breast cancer, and I took the Cooking After Cancer class during chemo,” Candyce said. After completing the course, Candyce agreed to share her witty and compassionate personality with others in the community recovering from cancer as a Cooking After Cancer facilitator. Thanks for 13 years of sharing cooking and nutrition knowledge, Candyce! THK / LCA ® is our longest-running program with over 25 years of providing free, bilingual cooking and nutrition education to Texas communities. Happy March 1st - it’s the start of #coloncancerawarenessmonth . Today, I wear blue to promote colon cancer awareness and to honor my dad who died from complications of colon cancer. 💙 Did you know that colon cancer is the 2nd most common cause of cancer death YET it’s one of the most preventable and treatable cancers if caught early enough? Unfortunately, my dad’s colon cancer was not caught early enough. He ate a lot of processed red meats classified by the World Health Organization (WHO) as a Group 1 carcinogen and that put him at higher risk for developing colon cancer. My dad also brushed aside the many warning signs and symptoms for years. In that time, the colon cancer slowly ravaged his body and eventually took him from this world way too soon. Though he’s gone, I’m still here to tell his story and encourage you to avoid a potentially similar fate by getting yourself AND your loved ones screened starting at the age 45, and even earlier for those with a strong family history like me. I’ve had two colonoscopy screenings so far and both negative. 🤞🏽🤞🏽🙏🏽🙏🏽 And even if colon cancer runs in your family, you are not necessarily destined to a similar fate. You have more power over your health than you realize. By reducing or eliminating processed red meat and eating more fiber rich, plant forward foods, you will decrease your risk of colon cancer while increasing your chances of a healthier vibrant life. My dad’s story is why I remain so passionate about healthy living. And it’s why I strongly encourage you all to do the same.
