Non-Dairy Cottage Cheese made from coconut milk (2 Versions) Version 1: Makes 5 servings Each serving provides 1 condiment 2 cups refrigerated unsweetened coconut milk 4 teaspoons unflavored gelatin Version 2: Makes 16 servings Each serving provides 2 condiments 2 cups canned coconut milk 4 teaspoons unflavored gelatin Instructions 1. In a small bowl, sprinkle the gelatin over ¼ cup of the coconut milk. 2. In a small saucepan, bring the remaining coconut milk to a simmer. 3. Whisk in the softened gelatin mixture and whisk vigorously until dissolved. 4. Pour into a bowl and refrigerate until set, at least 5 hours. 5. Using a handheld mixer or standing mixer, blend on medium speed for 20-30 seconds until the texture resembles cottage cheese. 6. Add a pinch of salt and any desired toppings.

Chile Rellenos 🌶️ Yield: 4 Serving Per Serving: 1 Lean, 1.5 Greens, 1.25 Condiments Ingredients: 12 whole green chiles split downside 6 egg whites 3.5 ounces cooked, shredded chicken 12 oz part-skim mozzarella ½ tsp cream of tartar 1 tsp garlic powder 1 tsp onion powder Directions: Preheat the oven to 400. In bowl, mix 10 ounces mozzarella, chicken, 1.2 tsp garlic powder and ½ tsp onion powder. Using KitchenAid mixer, whip egg whites on high w/cream of tartar, ½ tsp garlic powder, and ½ tsp onion powder until stiff peaks form. Took 5 minutes. Spray baking dish w/cooking spray. Spread half the egg mixture on the bottom of the pan. Place 1-2 tbsp cheese mixture onto chiles. Fold chile around filling and press into egg mixture, make sure mixture envelops the sides of the chile. Spread remaining egg over chiles, sprinkle w/ cheese. Cover w/foil, bake 30 minutes, Remove from oven, increase temperature to 450. Remove foil, bake for 10 minutes until the cheese bubbles. #optavist #HelloAfterTheAfter

Savory Ham and Cheese Crepes Serves 4 INGREDIENTS: For the crepes: 4 eggs 60g (1⁄2 cup) almond flour 1⁄ 4 tsp salt 240ml (1 cup) heavy cream For the filling: 115g (4oz) diced ham 120g (1⁄2 cup) ricotta cheese 15g (1 tbsp) butter INSTRUCTIONS: 1. Make the crepe batter by blending eggs, almond flour, salt and heavy cream until smooth. 2. Heat a small nonstick skillet over medium heat and coat with cooking spray. 3. Pour in 2-3 tbsp batter and swirl to coat bottom. Cook 1 minute per side. Repeat with remaining batter. 4. For the filling, cook ham in butter 1-2 minutes. Stir in ricotta and nutmeg until heated through. 5. Fill each crepe with cheese mixture and fold over. Here’s a Fun & healthy bagel option!! 🥯🥯🥯Happy Saturday! Almond Everything but the bagel Bites! How to make it: Mix 1 cup almond flour, 1/2 cup Greek yogurt 1/2 tsp baking powder. Knead for a couple minutes. Roll into 1 tbsp sized balls, Spray with oil & coat with everything bagel seasoning. Put in your Pampered Chef Air fryer and set to AIR FRY @ 350F for 10-12 mins. -Serve with cream cheese and enjoy Pro tip: If the dough isn't firm, keep adding almond flour until it is, sometimes I end up adding an extra 1/4 cup to get the right texture.

Ingrediants Prep Time: 15 mins Cook Time: 30 mins Servings: 3-4 To Make Jowar Roti Jowar Flour - 1 1/2 Cups Water - 2 Cups Salt - 1 Tsp (Buy: https://amzn.to/2vg124l) Ghee (Buy: https://amzn.to/2RBvKxw) . Method: 1. Take water in a saucepan and add salt to it. Heat it. 2. Once the water starts bubbling, add the jowar flour. 3. Mix the flour with water and let it become a thick mass. 4. Once the flour absorbs water and becomes thick, cover the saucepan with a lid and let the dough sit for about 10 minutes. 5. After 10 minutes, transfer the dough to a large bowl and knead it. 6. Once the dough is ready, divide it into even sized balls and keep them aside. 7. Dust the rolling surface with some dry flour and keep the dough balls on them. 8. Roll them into rotis with medium thickness and then cut them with a round cutter for a nice shape. Prepare all the rotis in the same manner. 9. Heat a tawa/pan and place the rolled out dough. 10. Keep flipping it on both sides and cook until the brown spots appear. 11. Apply some ghee on both sides and gently press the rotis in. 12. If you’re looking to spruce up your burgers with something totally new, try out these slightly sweet and tangy sliders! Serves 12 Ingredients: • 1 egg • ½ cup flour • ½ cup panko breadcrumbs • 1 teaspoon onion powder • 2 teaspoons dried parsley or thyme • (1) 8-ounce goat cheese log • Olive oil, for frying • 1 cup balsamic vinegar • 12 premade slider patties • 1 cup raspberries, smashed • 12 slider-sized buns Instructions: 1. Line up three small bowls for dredging. In the first bowl, gently whisk an egg. In another bowl, add in the flour, and in the last bowl, combine the panko breadcrumbs, onion powder, and parsley or thyme. 2. Remove the goat cheese log from the fridge, and cut into 1-inch discs. Add about 2 inches of oil to a sauté pan, and bring to medium-high heat. 3. Bread the goat cheese by coating each piece in flour, then egg, and, flour, egg, and then breadcrumbs. Place gently into the sauté pan, and fry until golden brown. Remove from the pan, and place on a paper towel to dry some of the grease. 4. In a small saucepan, bring the balsamic vinegar to a boil, and reduce until thickened. 5. Season the patties, if desired, and then grill for three minutes per side. While the patties are grilling, use a fork to smash the raspberries in a small bowl. Kabocha Soup Makes 6 servings Per serving 1 vegetable 3 condiments INGREDIENTS: 3 cups low-sodium chicken broth 1/2 tsp. salt 2 cups kabocha puree 1 cup chopped leeks 1/2 tsp. chopped fresh thyme 1 clove garlic, minced 6 whole black peppercorns 1/2 tsp. freshly ground ginger 1/4 tsp. ground cinnamon 1/8 tsp. ground nutmeg 1/2 cup heavy whipping cream DIRECTIONS: In a large pot, combine ingredients 1-10 and bring to a boil. Reduce heat to low and simmer for 30 minutes, uncovered. Using a food processor or blender, puree soup in small batches (1 cup at a time). Or, use an immersion blender to blend right in the pot. Return soup to pot and bring to a boil. Reduce heat to low and simmer for another 30 minutes, uncovered. Remove from heat and stir in heavy cream.

“Almost Potato” Turnip au Gratin 18 oz raw sliced turnips, about 3 large turnips (8 greens) 1/2 Cup finely chopped onion (8 condiments) 8 oz reduced-fat Emek swiss cheese slices (2 leans) 1 tsp crushed garlic or garlic powder 1 Cup Parve Chicken Broth 1 tsp salt Preheat oven to 350F. Peel the turnip to reveal white flesh, removing any yellow flesh (there may not be any if turnips are very fresh). Cut turnip in half and slice 1/4” thick. Add chicken broth and salt to pan with enough water to just cover the turnips and bring to boil - only until they are just becoming translucent, no more than 3-4 minutes at the boil or they will fall apart. Carefully remove to strainer and drain. Coat a casserole dish with non-stick spray and spread chopped onion over bottom of pan. Layer the turnips evenly over onion and cover with the Swiss cheese slices. Bake until bubbly and browned on top, about 30 minutes. Makes 8 servings - Each counts as 1 vegetable serving, 1-3/4 condiments, and 1/4 lean serving.
