I'm curious what "interactive" means to folks --- Does this mean click/tap on one specific highlight to proceed, or do you have multiple interactive areas where someone can choose their own adventure?
i do create video - our team uses a tool called playplay. it is time consuming and requires collaboration with our in-house design team.
I recently used Supademo to create an interactive product tour. I was able to do this on my own and spent less time than expected, thanks to auto-generated voiceovers and easy pan/zoom tooling.

Heenle Turner, PHR, PHRca - I'd add that we also recommend keeping demos to less than 30 screens. Again, emphasis on getting to the punchline quickly and not losing prospect/customer attention.
