Angus Measurement Services, LP Special Service Group 💪Share Knowledge Its Thursday morning December 28 here in the Old Permin Basin, on the southwest edge of the Llano Estacado, off the east side of the Frankle City Highway in beautiful Gaines County, Texas the year is winding down. There was a lot of things going through my mind this morning. Lots of political, religious even work topics I could chew on and somehow related them to what we do. Instead, I am flicking through my feed and come across this post about fruit cake. I have a confession to make. I am a fruit cake fiend. I love good fruitcake. And if you are a person who makes or knows someone who makes a good fruit cake, especially one that has been soaked in brandy, good brandy, you better lock the doors and put the dogs out. One of those assembled two weeks before Thanksgiving, soaked liberally in brandy, wrapped in muslin then dosed once or twice a week until just before Christmas. The Unicorn is a decent and presentable cook. For all the staples like cornbread (no sugar), chicken fry steak, steak fingers, gravy, pinto beans (pressure cooked) she holds her own. But when it comes to baking, that woman is a cut above. When she makes Banana Pudding, there is a pile of bowls, spoons and utensils in the sink three feet high. The banana's have to be just the right ripeness. Yellow with just the right amount of tan freckles on the peal, Slayton Bakery vanilla wafers, Adams Vanalla extract, whipping cream and eggs. The good stuff. But she no make fruit cake. Being raised in Welch Texas which is just slightly larger than a wide place in the road fruit cake was not a holiday staple. Even in Nolan County where I was raised, they were there, just seemed nobody made them. I hired out with Mobil Pipeline in December 1979 and the end of the line for west Texas crude oil was Corsicana. That was where I was introduced to Collins Street Bakery and their version of fruit cake. This has been a staple for a long time. It takes me about two of them to get my fill for the year. Those occasional brandy soaked and aged fruit cakes are a treat. Ham means Thanksgiving, fruit cake means Christmas and Black Eye peas is New Years Day. The Unicorn put up about 50 quarts of black eye peas this summer so we have plenty of them for New Years Day. These are the holiday foods that bring memories of the holidays.
