Mitjans go for tapas in Denmark, January 2025. One of the key hallmarks of Spanish gastronomy is the “tapas” culture. Tapas are, originally, small portions of food served in bars to pair with a drink. In Spain it is very common to go for tapas: a tradition that consists of going from bar to bar with friends to eat and drink (usually beer or wine). The origin of this tradition is unclear and there are different explanations. Some believe that it was born out of the economic interest of the owners of the taverns, who offered salty food (for example, ham) so that the customer would order more drinks. Whatever the origin is, tapas are known all over the world and are an essential element of Spanish culture. Sometimes (a lot of times 😉) the best thing a chef can do is just leave an ingredient alone and let it be. There's infinite ways to lose ourselves into the complexity that gastronomy offers and that's definitely an activity we like spending time on within the CERVINO team. But gastronomy is more about conquering the heart, than impressing the mind. Technical advancement is amusing. I have noticed however, that complexity often times clouds the story that an ingredient or a dish has to tell us. Keeping things simple, resisting the urge the change it's characteristics and ampliyfing it's strengths by shining light on it's true nature really is a beautiful way to let it speak to us the way it's suppose to. This is one of the philosophies the CERVINO team kept leading in designing the menu for our upcoming pop-up gastronomy experience named "under the italian sun" - a 5 course luxury menu inspired by memories and experiences under the italian sun. A gastronomic journey beyond the palate through my origin country. A journey that shines light on my favorite ingredients and captures them in their true nature.
