In our travels at Frylow, we noticed that about 75% of deep-fryers have improper temperature readings when frying. (350F normally, 340F with Frylow). Too low of a temperature can cause longer cook times and oily fried products. Too high of a temperature can cause shorter cooking times, burnt outside and uncooked fried products in the center. Test the oil temperature before each shift. It takes 5 seconds.
