Whether planning a party or a simple dinner, vegetarians are bound to show up. An easy way to satisfy your vegetarian guests is to make a frittata – some of the preparations can be made the day before. Here is one of my favorites, a Swiss chard frittata with pine nuts, currants, and pecorino. ⠀ ⠀ The Swiss chard can be lightly steamed in olive oil or butter the day before – you want to wash the leaves, cut off any funky bits, and cut the leaves and stems into ½ inch ribbons. When you’re ready to cook the frittata, mix the cooked chard with the currants and pine nuts, then add the well beaten eggs (about the same volume as the cooked chard). Add a little salt and pepper and mix well. Heat some butter and olive oil in a non-stick pan, over medium heat, and add the egg mixture. As the frittata cooks, pull the mixture away from the sides to allow the uncooked portion to cook. In order for the top to set, you can either flip the frittata over to finish cooking it, or place it in the oven for a few minutes. Serve on an attractive platter and top with pecorino. Pre-preparation process of milky mushroom. (Cleaning and cutting) A quick rinse in tap water (It can also be washed in water with little salt added.) Avoid soaking mushroom for a prolonged period of time as it may absorb more moisture content. If the mushrooms are to be stored for later use then wipe the adhering water with towel. The milky mushroom as a whole is edible (both the stem and cap portion). No need to peel the mushroom. Here are a few tips to get ya goin’: 1. **Pick What's Ripe:** Check your garden daily. Tomatoes, zucchini, herbs – if they’re lookin’ plump and ready, snag 'em! Fresh veggies have way more flavor than anything you’ll find in a store. 2. **Keep it Simple:** When you’re usin’ fresh ingredients, you don’t need much to make a stellar dish. A little olive oil, salt, and pepper can go a long way. Think simple salads or roasted veggies – those bright flavors will shine through. 3. **Mix and Match:** Get creative! If you’ve got greens and a few herbs, toss ‘em together. Or, grab some root veggies and make a hearty soup. Playin’ with what you have on hand is half the fun. 4. **Make it Family Time:** Cookin’ is always better when you involve others. Get the kiddos or your buddies in the kitchen. Hey y’all! Let’s talk about one of my favorite things—garden-to-table cooking. There’s nothin’ quite like wanderin’ down to your garden, pickin’ fresh veggies, and whippin’ up a meal that’s packed with flavor and love. It's like bringin' the goodness of the earth right to your plate, and let me tell ya, it don’t get much better than that! First up, if you’re just startin’ your garden, go for easy-to-grow veggies like tomatoes, zucchini, and lettuce. They’re not too fussy and pack a punch in the flavor department. Now, when you’re ready to cook, here’s my tip: always taste your produce before you start cookin’. That way, you get a feel for how sweet or savory your ingredients are, and you can adjust your seasonin’ accordingly. And don’t forget herbs! Basil, cilantro, and parsley are super easy to grow, and they elevate any dish. Snip a handful and toss ‘em on a simple salad or sprinkle ‘em over roasted veggies for that fresh pop. You’d be amazed at how just a little greenery can change the game. When it comes to cookin’, keep it simple! A stir-fry with whatever’s ready in your garden is a win. Just sauté your veggies in some olive oil, throw in a splash of vinegar, and season it to your heart’s content. You can even toss in some leftover grains or beans to round it out. Lastly, get creative! If you’ve got a surplus of zucchini, think about makin’ zucchini bread or fritters. You can even sneak those greens into smoothies or homemade sauces.
