Vikings is proud to run an apprenticeship program that not only helps young people obtain a qualification but also provides them with a supportive and encouraging workplace. Four years ago, Ethan stepped into the kitchen at Chisholm Vikings, to embark on his culinary journey. Fast forward to today, Ethan's hard work and dedication were celebrated as he officially received his qualification. Presented by Access Canberra and the Vikings team on Wednesday 20 November, this event marked a significant milestone in Ethan’s career. Executive Chef Ben shared, “After a lot of hard work, Ethan has earned himself a qualification that he will be able to take with him for the rest of his life. We are incredibly proud to have played a part in Ethan’s journey and to have watched him thrive in the heat of the kitchen.” To honour the occasion, Executive Chef Ben presented Ethan with a personalised chef jacket embroidered with his name and an engraved chef knife. As part of #HospitalityApprenticeshipWeek we look at the skills our colleagues have gained from their apprenticeships: Sian is currently a Kitchen Manager who has successfully completed a Level 2 Apprenticeship and progressed to Level 3 Hospitality Supervisor Apprenticeship: "Level 2 helped me progress into my manager role. I learned different communication and learning styles. Level 3 has helped me a lot when it comes to incentives and manager styles." Gareth is a Kitchen Team Leader who is also onto his second apprenticeship at Level 3: "I have learned more around leadership and reduced waste for kitchen. New skills outside of work include making different types of bread, butchering, maths skills and I would like to learn how to cook on an open fire in the future." Nick is a General Manager who is currently on a Level 5 Coaching Apprenticeship: "I have learnt a lot about myself and how to read situations better. I am more self-aware of myself and others. The course has taught me a lot and I can see the difference by coaching my team rather than telling them what to do. My colleagues have also found our sessions very helpful. It has been a life changing course in all honesty, I am so grateful for the opportunity. Two brilliant success stories from UHI Argyll Modern Apprentices!
Over the past 18 months, two of our amazing team members, Mattie and Mia, have been working hard to complete their Modern Apprenticeship in Hospitality Services (SVQ Level 5). Mattie said "It’s great to complete this award and it’s going to be great to have it on my CV for the future. My favourite thing about how the modern apprenticeship works has been gathering evidence on the job and being able to use what I’m doing every day to get my qualification." Mia said "It’s been hard work, but I’m so happy I have achieved my apprenticeship. It’s helped me understand my job and my department a lot more and given me confidence at work and in general." A huge congratulations to both of you for your dedication and achievement! Your hard work truly shines, and we’re so proud of what you’ve accomplished. Our People Development manager, Amanda, said of them both "Mia and Mattie both worked really hard to achieve their Modern Apprenticeships and it’s been great to see them grow in confidence as they’ve worked through the coursework. Modern Apprenticeships are a great way to learn on-the-job, and are recognised extensively throughout the industry so they’re a great qualification for anyone interested in a career in hospitality. The award can be tailored to your specialist area, so in Mia’s case it was Housekeeping focussed, and for Mattie, it was Food and Beverage focussed." A huge congratulations to our Marketing Executive and Receptionist Claudia Testa who has just passed her Level 2 Reception Management apprenticeship. We wanted to know a little bit more about Claudia's journey so we asked her a few questions. What was your first day at Burgh Island like? I remember coming down the hill for the first time and seeing the Island glistening with the sunrise. Then, Vlad came to collect me on the sea tractor at 06:00 and showed me my accommodation and for lunch I had a fantastic crab sandwich. What made you choose this apprenticeship programme? I have always being very ambitious and I like to challenge myself, this apprenticeship gave me the chance to do exactly that. What have you learned from your apprenticeship? For it I learnt to be more organised, to assess and better understand the challenges and capacities of people working with me every day, to make connection and networking and overall to be a better leader. What are some of the benefits of doing an apprenticeship? Apprenticeships will help you move forward in the industry. Experience paired with knowledge can take people really far. How are you applying your skills and knowledge that you’ve gained to your working day? The Belbin team roles is something that stuck on me. Being able of better understanding me and my colleagues through this role definition has certainly shaken the way I deal with everyday workload. If you could only keep 5 possessions, what would they be? My camera, my coloured pencils, the cross-stitch pattern I’m currently working on, my scrapbook and a kindle probably… so I can have as many books as I want! What can you reveal about yourself that few people know…? I am actually a decent cook, and I love to have dinner parties for my friends. Sadly I don’t get to cook that often. What would you say to someone thinking about doing an apprenticeship? To just go for it. If you're looking for a career in hospitality that allows room for growth and learning, look no further than Burgh Island.

Discover one of the Key Findings from our Recent 2024 Apprenticeship Survey on behalf of the Hotel & Gastro Union - Die Arbeitnehmerorganisation 🔍 This spring, we at Ipsos in Switzerland, conducted a survey of 1,089 apprentices across all language regions and years of apprenticeship. Bakers and confectioners lead the way with top-rated vocational trainers! Despite challenges, many apprentices cherish their professions for the creativity and varied work they offer. However, one in four apprentices is still unsure about staying in their profession due to working hours and conditions. Addressing these issues is crucial for retaining talent in the industry. The survey also highlighted that 70% of prospective bakers and confectioners enjoy their jobs, and 81% believe their trainers have excellent specialist knowledge.
