Why is cupping important? From a roaster's perspective, cupping is vital for assessing coffee bean quality. By tasting different samples side-by-side, we can pinpoint the best beans for purchase or production. Cupping lets us taste coffee in its purest form, revealing its true flavours and aromas. Breaking the coffee's surface releases its aroma, transporting us to its origin. Cupping exposes you to lots of different coffee flavours. From fruity to chocolatey, you get to taste the full range and expand your palate. Cupping helps sharpen your sense of taste. With practice, you get better at picking up small differences in flavour, acidity, and more. Lastly, the coffee industry is always changing. Whilst traditional distillation is essential to a number of spirit categories, including some of those we produce, it has its limitations and is far from being the ideal method of extracting flavour, especially from delicate herbs, spices, flowers and fruits. 🍺 Did you know that beer is more enjoyable when served cold? A recent study found that the ideal temperature for a perfect pint is around 5°C, which is roughly the temperature at which beer is stored in the fridge. 🌡️ Scientists discovered that at this temperature, the chemicals in beer are more likely to be aligned in a way that enhances the taste. This means that serving beer cold amplifies certain taste sensations, providing a more refined and enjoyable experience for many consumers. 🌬️ The study also explored how temperature affects surface tension and found that different levels of heat can impact the formation of clusters and chains of molecules in the drink. As beer warms up, the disruption of these clusters can alter the taste profile and decrease the distinct "ethanol-like" flavor. So, next time you reach for a beer, consider serving it chilled for the best tasting experience. A little knowledge can make a big difference! Having a basic understanding of how we interpret flavour can make a big difference to tasting whisky. Flavour is a system that employs smell (olfaction), taste (gustation), and mouthfeel (somatosensation plus others). While we commonly refer to the process as nosing and tasting, the majority of what we describe in a whisky is in fact a combination of orthonasal olfaction and retronsasal olfaction - or to put it simply, aroma. Knowing that we detect aromas initially through the nostrils and secondarily from the mouth helps to break down the process. This understanding that flavour is a process rather than a single event helps us to better identify and differentiate the different components within a dram. It also helps us to have a closer relationship with one of the most meaningful facets of life. #whiskytasting #singlemaltwhisky #sensoryscience
