Q2-2024 Marketplace Update📈🥩 The rising popularity of international cuisines and the multiculturalism trend drive growth in ethnic and global meals on restaurant menus and home cooking shopping lists. A first step in tapping into this market for meat and poultry processors would be to consider local ethnic populations. Those residents, particularly if first or second-generation, may seek out underutilized parts of the carcass, such as thin meats and organs. These customers may prefer traditional meats that are processed and cut differently. Because many of these types of cuisine are more challenging to create in the home kitchen, providing those customers with convenience can drive demand. That can be as simple as giving pre-marinated, portion-controlled items for meat and poultry. Bring avocados inside the restaurant immediately upon arrival. Heat is the greatest factor in destroying quality. 2. Determine the stage of ripeness. Do not store avocados near the fryer. 3. When stacking boxes, place those with ripe avocados on top. 4. Store ripe avocados at 38-42 degrees Fahrenheit to slow ripening and avoid cooler damage. Today is National Lobster 🦞 Day Once considered the “cockroaches of the sea”, these crustaceans have come a long way from their humble beginnings. During the 1700s lobsters were so plentiful that they used to wash ashore on Massachusetts beaches in piles up to 2 feet high. Lobsters were considered the “poor man’s chicken” and primarily used for fertilizer or fed to prisoners and slaves. During the 1880s, chefs in Boston and New York City restaurants began developing recipes and lobster became a key dish on many restaurant menus. As chefs experimented with different lobster recipes, they realized that the meat was freshest when the lobster was cooked alive. Cooking the lobster alive went a long way in changing the perception and taste of lobster meat. When WWII began and food became short supplied, lobster meat was canned and fed to soldiers.
