I recently visited my favourite farm-to-table restaurant in my home town Godalming, where the expert chefs created meals with fresh local ingredients. As well as amazing food, the service team all had an in-depth knowledge of the produce being served and, most importantly, there was minimal waste. Globally, the UN reports that around 17% of food is wasted, which is pretty shocking considering 10% of the world struggles with food scarcity. Typically restaurants and events are some of the worst offenders for food waste, with up to a fifth of it getting chucked at the end of the day. But does it really have to be this way? My farm-plate experience got me thinking about the ways we can work together to be more sustainable in the industry. 🥙 At Carbis Bay Estate Hotel, which hosted the G7 summit, their onsite restaurant, Ugly Butterfly, takes a zero waste approach to building the menu. Every scrap of fruit and veg is used- even flower stems in cocktails! At Sledge we’re mindful of working with venues or catering partners that consider food waste, and have taken steps to reduce it. 🍅 As well as reducing waste, I’d love to see more restaurants and event spaces utilising their outdoor spaces to grow veg and herbs, or working with nearby suppliers rather than importing food. It helps the planet, but it also means fresher flavours and happier consumers. 👯As Taylor Swift recently proved with her generous food bank donations, giving back to local communities where you’re hosting events is really important. And while most of us don’t have her bank balance, it doesn’t mean we can’t make smaller donations or donate extra food to local homeless shelters. Our depots will opt for a local option when in season over an import, supporting our local farmers.
