Bad table manners can cost you a job, a date, and—in my case—my friendship, hint: if you are ever rude to a waiter. “How you behave in a restaurant is how you behave in life.” Ever since I heard that observation from a friend years ago, I’ve wondered why it hasn’t become a more common aphorism." I think everyone should work in the service industry - it's the very reason I can interview anyone. I grew up working in a restaurant, and I think it should be the cornerstone of market research training, served up with a side of human empathy that becomes [hopefully] ingrained in you long past your waitressing days. Forget the myriad brands I've worked with—that's the icing on the cake; the foundation came from years of seeing people at their best AND worst. Empathy Over Anger... Recently, my wife and I decided to indulge in a luxurious dining experience at one of the renowned hotels in town. Eager to savor some delectable vegetarian cuisine, we placed an order for our favorite dish, chilli paneer. However, our dining experience took an unexpected turn when the steward arrived at our table with a plate of chilli chicken instead. Before serving the dish, he confidently announced, "Ma'am, chili chicken for you." My wife, a staunch vegetarian, was taken aback and promptly corrected him, stating that we had ordered chilli paneer. In that moment of misunderstanding, as the steward apologized profusely for the mix-up, we were faced with a choice. We could have reacted with indignation, demanding to speak to the manager, and perhaps even leaving scathing feedback. However, we chose a different path. Despite the initial confusion and inconvenience, we responded with empathy and understanding. Acknowledging that mistakes can happen to anyone, we assured the steward that it was not a big deal and accepted his apology graciously. We simply requested the correct dish, chilli paneer, and continued our meal without further fuss. Our decision to respond with kindness and patience yielded unexpected outcomes. The steward, visibly relieved by our understanding demeanor, expressed his gratitude for our understanding. His demeanor shifted from anxious to appreciative as he swiftly rectified the mistake and ensured that we received our desired dish. As we reflected on the incident later, we realized the power of empathy in fostering positive interactions. By choosing to respond with understanding instead of anger, we not only diffused a potentially tense situation but also uplifted the spirits of the staff involved. Our simple act of kindness created a ripple effect of positivity in the restaurant. In a world where conflicts often escalate quickly, our experience serves as a reminder of the importance of empathy and compassion in all interactions. It's a testament to the fact that a little understanding can go a long way in transforming an ordinary dining experience into an extraordinary lesson in human connection. So, the next time you encounter a hiccup in your dining experience, remember the power of empathy. The show also has amazing character development and is a window into the human condition. To create a mind-blowing fine dining experience you need: -A creative chef. A mastermind behind the operation. -High quality ingredients & balance between the different components. -A loyal band of line cooks (Read Kitchen Confidential by Anthony Bourdain) -An extreme high level of hospitality (Read Unreasonable Hospitality by Will Guidara). You miss one of these and it could ruin the experience. When you get to live this you realize that the price can be irrelevant as the experience has provided value. I see parallels between a fine dining experience and a well crafted integrated plan. -You need a team of professionals who coordinate and orchestrate the operation just a like a chef. -You need high quality and simple ingredients to build a portfolio. -You need a team behind to help you execute the plan and keep the operation running. -You need a high level of hospitality. I personally like laid back restaurants with a casual vibe. the type where you can go with jeans and a t-shirt. Here's my unsolicited list of recommendations: -Montreal Plaza. Charles-Antoine Crete is a true creative genius. -Mastard. Chef Simon Mathys has truly created an affordable fine dining experience and trust me it does not disappoint. -Beba. Ari & Pablo Schor have created one of the coziest and nicest experiences in the city.
