Andrew Gregory wrote a very telling piece about the impact of poor diets on children. Obviously, children being shorter, fatter, and sicker is a bad thing in itself, but there is a much bigger point behind this. In the book "Animal, Vegetable, Junk", Alan Bitman explores the history of human diets. While agriculture is the foundation of modern society, when humans first transitioned to agriculture people went from a varied but unstable diet to a much more predictable one with much less variety. The outcome... people lost on average 5 inches in height. People then, were not accustomed to this way of eating and it had a measured impact on growth. Now, over the intervening years, this has been remedied (to an extent and modern diets notwithstanding) but the key point here is that the fundamental change in diet stunted human growth. I don't think it too much of a leap to suggest that the explosion of UPF foods in our diet is a comparably systemic change and this finding is further evidence of it. Maybe in time we will be able to better process UPF foods and moderate our intake but I think its probably better to try and remedy this now rather than wait for 12,000 years like we did with agriculture. The production method is so important, and animals are a very powerful tool to restore soil health, ecosystems and water cycles if managed correct. A cow can netto help bind 18-30 tons of CO2e/yearly in soil and sustain carbon in soil. Regenerative Agriculture, biodynamic are climate mitigation systems. The nutrients levels is also high. And frankly animal is part of a biogenic carbon cycle, as we are. Focus on reducing fossil fuels, pollution and the fossilebased products like synthetic fertilizer and pesticides. The organic agriculture systems are avoiding this and a combination of regenerative practice and organic practice rocks.
