It's international hummus day! Are you a fan of this middle Eastern dip, served as a snack or appetiser? As well as being delicious and healthy, hummus is rather easy to make yourself at home too. SALMON WITH ORANGE ROSEMARY VINAIGRETTE Ingredients 4 salmon fillets 1 tablespoon coconut oil sea salt and black pepper, to taste 1 large orange, juiced 2 tablespoons apple cider vinegar 1 teaspoon garlic powder 1 teaspoon dried rosemary pinch of sea salt black pepper, to taste 2 tablespoons extra virgin olive oil Instructions 1. Place a large sauté pan over medium heat. 2. Add coconut oil. Season the salmon with sea salt and black pepper. 3. Place the fillets in the hot pan. 4. Cook for about 5 to 7 minutes per side. Remove from the pan and set to the side to cool. To make the vinaigrette 1. Add the orange juice, apple cider vinegar, garlic, rosemary, sea salt, black pepper, and extra virgin olive oil to a mixing bowl. 2. Whisk well and drizzle over the salmon. Quick Tuna Avocado Salad Ingredients: 1 can (5 oz) tuna in water, drained 1 ripe avocado, diced 1 cup cherry tomatoes, halved 1/4 cup red onion, finely chopped 2 tablespoons lemon juice Salt and pepper to taste Instructions: Combine tuna, diced avocado, halved cherry tomatoes, and chopped red onion in a bowl. it should come with a warning, eat with CAUTION, if addictive personalty do not try, as once you start you can not stop 😬 George's spicy rice, turmeric, cumin, garlic, ginger, onion, a couple of table spoons of chopped tomatoes, salt. wash the rice- basmati, a small amount of oil in the pot add the 2 small chppped onions, then when soft the 4 cloves garlic chopped and ginger around the same quantity chopped then the tinned chopped tomatoes the turmeric 1 tea spoon, salt and cumin 1 tea spoon, cook for 5 mins, once in a nice texture and pleasant to the eye 😅 Add washed rice cook and stir for a further 5 mins add boiled water to 10mm above rice, bring to boil add lid and simmer around 8-10 mins, 4 servings 🧐 Usually I add garden peas 🫛 as the flavour goes really well and the green looks good against the turmeric 🙂 goes with fresh salad, chopped cucumber and baby red sweet tomatoes 🍅 😋

What you call this delicious flower will probably depend on where you’re from! Whether it is Hibiscus, flor de Jamaica, or Rosella to you – making it into this drink will taste so refreshing! To make our Rosella Refresher we’re combining this delicious hibiscus tea with homemade lemonade. I suggest doubling the recipe because one pitcher never seems to last long! You need the following to make this new favorite: Ingredients: 1 cup lemon juice 1/3 cup honey 3 1/2 cups cold water 4 cups Hibiscus/Rosella tea – cooled Mint leaves (for garnish) Lemon Slices (for garnish) Directions: Combine 1/2 cup water and 1/3 cup honey in a small saucepan. Bring to a boil and stir until all the honey has dissolved into the water. Let simmer for 3-5 minutes on low. Remove from heat and let cool. Juice lemons to equal 1 cup or use prepared lemon juice. Combine lemon juice, honey/water mixture, and 3 cups water in a pitcher to make lemonade. Stir well. Add the hibiscus tea and stir again. Garnish with lemon slices and mint leaves.
