But every time I sit down for a meal, I reflect on my plant-based journey 🌱 This morning, while enjoying my Muesli Breakfast Bowl (link to recipe down below), I was brainstorming ways to help people incorporate more plant-foods into their daily lives. *** This weekend, I attended "Farm Aid," a music festival for supporting local farmers and food sustainability. It was inspiring to meet farmers and enjoy locally sourced meals like a "beans, greens & grain bowl" with black beans, brown rice, and organic roasted corn. As opposed to the typical unhealthy food they serve at concert venues, the food this weekend was healthy, fresh, and everyone loved it! 🥗 Here was my takeaway: We as humans gravitate toward what's EASY. If we make healthy eating accessible, we’re more likely to stick with it ✅ Ask yourself—how can you make healthy choices easier in your daily routine? - Could it be eliminating all unhealthy snacks in your cupboards? - Batch cooking some of your meals to freeze and have for later when you need a quick meal? - Replacing any refined sugars you may consume regularly with a healthier fruit sugar alternative? Do you ever feel like you need to take a nap after eating? This can be frustrating, especially when you still have a day’s work ahead of you. As soon as we ingest food, our bodies get to work looking for the nutrients it needs from that meal. The less nutrient-dense our choice of food, the more energy the body has to use up looking for nutrients. This is what causes the feeling that we need to lay our heads on our desks for a quick nap after lunch. You might especially notice this after a staff lunch full of pasta, or a BLT. The feeling we get from a more nourishing lunch, however, is very different. A bone broth chicken and veggie soup or a mixed greens, salmon, and quinoa salad, for example, keeps us out of that post-lunch slump. Because the body can easily find what it needs from that meal!
