Fabulous fungi is what we study, In the science and art that is mycology, Yeasts and moulds that cause rot and decay, Or fermentation when rot goes great, That’s right without them, no beer, bread, or kimchi Or kombucha, kefir, some of these involve a SCOBY, That’s yeast and bacteria to you and me, Working in sweet but sour harmony, But fungi aren’t always so great, As Johnny Cash found when eating beans once again, Fungi can infect humans and cause disease, Especially those with weakened immunity, But leading research to help us treat and understand, Is the National Mycology Reference Laboratory, And their wonderful collection of things that are deadly, And maybe one day if our luck comes in, We’ll, just like Fleming before, find another Penicillium.
