A key part of children thriving in environments that truly support their physical and mental well-being means it begins at home and carries forward to every school and extra-curricular activity a child is involved in. It means that when nutrition is the foundation, everything else a child does from home to school and beyond, they can give their best to as good nutrition plays a massive role in their overall development. Providing healthy, whole food, plant-based meals will make a significant difference in their lives. Our aim at PBNM is to help educate parents, making it easy for them to provide some of the foundational nutrition for their children. Another way is our initiative working with schools in Illinois to help them comply with the law that requires plant-based food options be offered in every school K-12, whether a public, private or charter school. It’s exciting work, but we want more hands helping. We can provide so much, yet if we remain a small group, we will be working more slowly. But for some people with Special Educational Needs and Disabilities it’s not that simple. “The environment…is it clean enough? Can I eat with this noise? The texture…it doesn’t taste the same as last time, it’s too sour, the peel curls in my mouth and makes me gag. Who will I eat with? If I eat alone, I know I’m safe, safe from the strong smells. I just want to eat my lunch…the way I like it!” You see it’s not as simple as picking a healthy option for some children and young people.
