Today is International Day of Potato. Domesticated 7,000 years ago around Lake Titicaca in South America, the potato has spread over the world during the last 500 years. It is currently the world’s most important root and tuber crop, and the world’s 3rd most important food crop after rice and wheat. About 375 million tons of potato are produced annually and more than one billion people worldwide eat it. Potato is cultivated for its tubers rich in starch, but the crop is also characterized by a high nutritional quality, contributing high levels of antioxidants, vitamins and minerals to the human diet. Pulses, also called “protein of the poor”, form a major portion of the Indian diet. They are a major source of nutrients. The potential of pulses to help address global food security, nutrition and environmental sustainability, has been acknowledged through the UN declaration of the 2016 International Year of Pulses. With rising demand for functional food, it has become important to develop new technologies like fortification and enrichment to produce pulse fractions with potential health benefits. Their increased production, processing and trading practices have raised the demand for quality assurance and standardization. The overwhelming use of pesticides to increase the yield, and treatment with insecticides during storage make these grains unsuitable for human consumption. Adulteration is primarily intended for economic gain. Inferior-quality pulses are colored with non-permitted dyes to make them look superior. 🌱 Why cereals are the key to food security in the Mediterranean? 📌 Cereals are the main component of the caloric intake of people in most countries and the staple foods of most food cultures are based on cereals. However, as Ph.D. Marta Marson, Development Economist and member of the STAPLES Team from Politecnico di Milano points out, "This can decrease when countries become richer and move towards animal-based products through the nutrition transition". In her opinion, "it does not mean that cereals become less important, on the contrary, the number of cereals that are required to feed animals can even contribute to increasing the import requirements". 🗨 Ms. Marson reflects on this issue in the following interview published on ASCAME's blog where she also tells us about the STAPLES Project, a PRIMA Program project dedicated to enhancing resilience of the Mediterranean and MENA food systems in the face of global economic instability.
