Beef fillet, also known as tenderloin, or eye fillet, or ‘OMG THAT’S SO EXPENSIVE’, is highly prized for a reason - Its exceptional tenderness, mild delicate flavour, and lean texture. Part of the reason it’s quite a pricey cut is simply because there’s just not that much of it per cow! Approximately less than 2% of the yield from your average beast will be tenderloin, and just as an example, because all cattle are different shapes and sizes, you’d get between 3kg - 5kg per animal. So not that much = high demand which = higher price as there’s not as much to go around. Then it’s bonus is that due to the tenderloins lazy placement where is has minimal use and doesn’t bear any weight, they exceptionally tender cuts of meat which naturally makes them highly sought after. As the Breedr team is heading to Cattle Con National Cattlemen's Beef Association this week it seems a good time to reflect on the last 18 months; moving the family from the UK to Texas, working with some of the most exciting supply chains in the industry, and sadly losing my dad at 91 last Easter. It was my father Guy Wheal who inspired me to build Breedr; a company that at its heart supports ranchers and the meat supply chain to produce better beef more efficiently, using data to prove the enhanced quality. My dad always said that you make your own luck through hard work, being good to others and learning from your mistakes. We built Breedr to support and empower ranchers, cow calf, beef on dairy, backgrounders, feedyards, packers and even retailers to produce exceptional beef in a sustainable, life-enriching way. Dan Brier GM at Beef + Lamb New Zealand explains the key data that came out of the dairy beef progeny test(DBPT) and how it can aid farmer profitability. A 34kg difference per head in carcass weight by simply choosing to use a sire in the top 10% vs one in the bottom 10%.
