A Legume a Day

Last Monday was the Bean, Chickpea, & Lentil Wine Pairing hosted by the US Dry Bean Council and USA Pulses. It was a fantastic - and very delicious! - event. The chefs did a brilliant job of designing a menu that showcased the incredible versatility and deliciousness of beans and other pulses (e.g., chickpeas, lentils). There were seven dishes: - Pinto Bean Croquettes, Tomato Aioli - Octopus Great Northern Bean, Chistorra Sausage Skewer - General Tso's Red Kidney Bean, Sesame, Scallion - Red Lentil Falafel with Tzatziki - Classic Aba Chickpea Hummus - Black Lentil Spread - Oat & Black Bean Jam Bars The more I work in this space, the more beans continue to absolutely amaze me.
