December 2023 Wanås Restaurant was awarded
2 circles and 81-85 gastronomy points by 360° Eat Guide!
360°Eat Guide rates both gastronomy and sustainability, aiming to award the pioneers and groundbreakers of modern, transparent gastronomy.
Two circles
A rating of two circles indicates dedication and ambition in several areas of sustainability — environmental, social, and economic. The sustainability efforts are serious and long-term. Ambitions are communicated both internally towards employees and externally towards guests and suppliers.
Gastronomic points
The gastronomic points (0-100P) given to each restaurant illustrate the level of gastronomy experienced during the restaurant visits. The points represent the quality of what is served – presentation, flavor, composition, texture, savoir-faire, seasonality – along with service, knowledge, and environment.
Said about Wanås Restaurant
Country life gastronomy
Located on a beautiful farm with buildings from the 18th century and an internationally recognized art museum with exhibitions in the nearby forest — Wanås offers a gastronomy that reflects both the place and the seasons. Relationships with local farmers and producers have grown over time, and they now have a good insight into each other’s working methods, a prerequisite for sustainable cooperation. The fish is supplied by the only fishing operation with commercial rights for nearby Ringsjön Lake, which expressly works in the best interest of preserving the lake’s ecosystem. There’s a similar approach to the relationships with employees, who are encouraged to develop their skills and included in the decision-making process. Long-term thinking is also considered in all decisions; if an ingredient is chosen, there must be a plan for how every part of it will be used.
Cheers! 🥂
